 Ingredients

Seafood

  • 2 lobster tails
  • ½ lb (225 g) sea scallops, side muscle removed and patted dry

Garlic Butter Sauce

  • ¼ cup unsalted butter, divided
  • 1 tablespoon olive oil or avocado oil
  • 5 cloves garlic, finely minced
  • 1 tablespoon fresh lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste

For Garnish & Serving

  • Fresh parsley, finely chopped
  • Lemon wedges

 Directions

1 Prepare the Lobster Tails

  1. Preheat your oven broiler to high.
  2. Using kitchen scissors, carefully cut down the center of the lobster shell lengthwise.
  3. Gently pull the lobster meat upward, resting it on top of the shell while keeping it attached at the base.
  4. In a small bowl, melt 2 tablespoons butter and mix with half of the minced garlic, lemon juice, salt, and pepper.
  5. Brush the garlic butter generously over the lobster meat.

2 Broil the Lobster

  1. Place lobster tails on a baking sheet lined with foil.
  2. Broil for 8–10 minutes, until the meat is opaque and lightly golden.
  3. Baste once halfway through cooking for extra moisture and flavor.
  4. Remove from oven and set aside.

3 Sear the Scallops

  1. Heat olive or avocado oil in a large skillet over medium-high heat.
  2. Season scallops lightly with salt and pepper on both sides.
  3. Place scallops in the pan without overcrowding.
  4. Sear for 2–3 minutes per side, until a golden crust forms.
  5. Remove scallops from the pan and set aside.

4 Make the Garlic Butter Sauce

  1. Lower heat to medium.
  2. Add remaining butter to the same skillet.
  3. Add the remaining garlic and sauté for 30–60 seconds, just until fragrant (do not brown).
  4. Return scallops to the pan and gently spoon garlic butter over them for 1–2 minutes.

5 Serve

  1. Plate lobster tails and scallops together.
  2. Drizzle generously with warm garlic butter sauce.
  3. Garnish with fresh parsley and serve with lemon wedges.
