- 2 lobster tails
- ½ lb (225 g) sea scallops, side muscle removed and patted dry
Garlic Butter Sauce
- ¼ cup unsalted butter, divided
- 1 tablespoon olive oil or avocado oil
- 5 cloves garlic, finely minced
- 1 tablespoon fresh lemon juice
- Salt, to taste
- Freshly ground black pepper, to taste
For Garnish & Serving
- Fresh parsley, finely chopped
- Lemon wedges
Directions
1 Prepare the Lobster Tails
- Preheat your oven broiler to high.
- Using kitchen scissors, carefully cut down the center of the lobster shell lengthwise.
- Gently pull the lobster meat upward, resting it on top of the shell while keeping it attached at the base.
- In a small bowl, melt 2 tablespoons butter and mix with half of the minced garlic, lemon juice, salt, and pepper.
- Brush the garlic butter generously over the lobster meat.
2 Broil the Lobster
- Place lobster tails on a baking sheet lined with foil.
- Broil for 8–10 minutes, until the meat is opaque and lightly golden.
- Baste once halfway through cooking for extra moisture and flavor.
- Remove from oven and set aside.
3 Sear the Scallops
- Heat olive or avocado oil in a large skillet over medium-high heat.
- Season scallops lightly with salt and pepper on both sides.
- Place scallops in the pan without overcrowding.
- Sear for 2–3 minutes per side, until a golden crust forms.
- Remove scallops from the pan and set aside.
4 Make the Garlic Butter Sauce
- Lower heat to medium.
- Add remaining butter to the same skillet.
- Add the remaining garlic and sauté for 30–60 seconds, just until fragrant (do not brown).
- Return scallops to the pan and gently spoon garlic butter over them for 1–2 minutes.
5 Serve
- Plate lobster tails and scallops together.
- Drizzle generously with warm garlic butter sauce.
- Garnish with fresh parsley and serve with lemon wedges.
