Blackberry Dumplings Recipe
Ingredients
For the blackberry filling:
- 2 cups fresh or frozen blackberries

Instructions
1 Prepare the blackberry filling
- In a medium saucepan, combine the blackberries and sugar.
- Place the pan over medium heat and stir gently as the berries begin to release their juices.
- Add the lemon juice and lemon zest for brightness.
- In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry, then pour it into the berry mixture.
- Stir continuously until the mixture thickens into a glossy, syrup-like consistency.
- Sprinkle in the cinnamon and mix well.
- Remove from heat and allow the filling to cool slightly.
2 Make the dumpling dough
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold butter cubes and use your fingers or a pastry cutter to work the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the milk and vanilla extract.
- Stir gently just until the dough comes together. Avoid overmixing, as this can make the dumplings dense instead of soft.
3 Assemble the dumplings
- Preheat your oven to 180°C (350°F).
- Lightly grease a baking dish with butter or cooking spray.
- Take a small portion of dough and flatten it slightly in your hand.
- Place a spoonful of the blackberry filling in the center.
- Carefully fold the dough around the filling and seal the edges, forming a small ball.
- Repeat with the remaining dough and filling.
4 Bake the dumplings
- Arrange the dumplings in the prepared baking dish, leaving a little space between each one.
- Spoon any remaining blackberry sauce over the top for extra flavor.
- Bake for 25–30 minutes, or until the dumplings are golden brown and cooked through.
