 Ingredients

For the blackberry filling:

  • 2 cups fresh or frozen blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest (optional, but recommended)
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon

For the dumpling dough:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons cold unsalted butter (cut into small cubes)
  • 1/3 cup milk
  • 1 teaspoon vanilla extract

 Instructions

1 Prepare the blackberry filling

  1. In a medium saucepan, combine the blackberries and sugar.
  2. Place the pan over medium heat and stir gently as the berries begin to release their juices.
  3. Add the lemon juice and lemon zest for brightness.
  4. In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry, then pour it into the berry mixture.
  5. Stir continuously until the mixture thickens into a glossy, syrup-like consistency.
  6. Sprinkle in the cinnamon and mix well.
  7. Remove from heat and allow the filling to cool slightly.

2 Make the dumpling dough

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Add the cold butter cubes and use your fingers or a pastry cutter to work the butter into the flour until the mixture resembles coarse crumbs.
  3. Pour in the milk and vanilla extract.
  4. Stir gently just until the dough comes together. Avoid overmixing, as this can make the dumplings dense instead of soft.

3 Assemble the dumplings

  1. Preheat your oven to 180°C (350°F).
  2. Lightly grease a baking dish with butter or cooking spray.
  3. Take a small portion of dough and flatten it slightly in your hand.
  4. Place a spoonful of the blackberry filling in the center.
  5. Carefully fold the dough around the filling and seal the edges, forming a small ball.
  6. Repeat with the remaining dough and filling.

4 Bake the dumplings

  1. Arrange the dumplings in the prepared baking dish, leaving a little space between each one.
  2. Spoon any remaining blackberry sauce over the top for extra flavor.
  3. Bake for 25–30 minutes, or until the dumplings are golden brown and cooked through.
  4. Remove from the oven and let them cool for a few minutes before serving.

For a more rustic version, you can skip shaping individual dumplings and simply drop spoonfuls of dough over the blackberry mixture—this creates a dessert similar to a cobbler.
