Low Carb Raspberry Swirl Ice Cream (Sugar-Free, Keto-Friendly)
This creamy, refreshing dessert is perfect if you’re following a low-carb or keto lifestyle. It combines a rich vanilla ice cream base with a tangy raspberry swirl—without added sugar.
Ingredients
Ice Cream Base:
- 2 cups heavy whipping cream (cold)
- 1 cup unsweetened almond milk (or any low-carb milk)
- 3/4 cup low-carb sweetener (such as erythritol, monk fruit, or stevia — adjust to taste)
- 1 teaspoon vanilla extract
- A pinch of salt
Raspberry Swirl:
- 1 cup fresh or frozen raspberries
- 2 tablespoons low-carb sweetener
- 1 teaspoon lemon juice
- 1–2 tablespoons water (if needed)
Instructions
Step 1: Prepare the Raspberry Sauce
- In a small saucepan, combine raspberries, sweetener, and lemon juice.
- Heat over medium-low heat, stirring occasionally.
- As the raspberries break down, mash them gently with a spoon.
- Let the mixture simmer for about 5–7 minutes until it thickens into a sauce.
- If the sauce becomes too thick, add a little water to adjust consistency.
- (Optional) Strain the sauce through a fine mesh sieve to remove seeds for a smoother texture.
- Set aside and allow it to cool completely.
Step 2: Make the Ice Cream Base
- In a large mixing bowl, pour in the cold heavy cream.
- Using an electric mixer, whip the cream until soft peaks form (light and fluffy, but not stiff).
- Add the almond milk, sweetener, vanilla extract, and salt.
- Gently fold everything together until well combined. Avoid overmixing to keep the mixture airy.
Step 3: Assemble the Raspberry Swirl
- Pour half of the ice cream mixture into a freezer-safe container.
- Drizzle a portion of the raspberry sauce over the top.
- Add the remaining ice cream mixture as another layer.
- Spoon more raspberry sauce on top.
- Use a knife or skewer to gently swirl the raspberry sauce into the ice cream.
- Tip: Don’t overmix—light swirling gives a beautiful marbled effect.
Step 4: Freeze
- Cover the container tightly with plastic wrap or a lid.
- Freeze for at least 4–6 hours, or until fully set.
- For best texture, let the ice cream sit at room temperature for 5–10 minutes before serving.
Tips for Best Results
- Use powdered sweetener to avoid a grainy texture.
- Taste and adjust sweetness before freezing.
- Add whole raspberries for extra texture.
- For ultra-creamy results, churn in an ice cream maker if you have one.
