Step-by-Step Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine flour, sugar, salt, and instant yeast.
- Add the egg, oil, and warm milk.
- Mix until the dough begins to form.
- Knead for 8–10 minutes until the dough is smooth and elastic.
If the dough feels too sticky, add a little flour.
If it feels too dry, add warm water 1 tablespoon at a time.
- Shape into a ball and place in a lightly oiled bowl.
- Cover with a clean towel or plastic wrap.
- Let it rise in a warm place for about 1 hour, or until doubled in size.
Step 2: Cook the Ground Beef Filling
- Heat 1 tablespoon oil in a pan over medium heat.
- Add chopped onion and cook for 2–3 minutes until soft.
- Add garlic and cook for 30 seconds.
- Add ground beef and cook until fully browned, breaking it apart with a spoon.
- Add bell pepper, tomato paste, salt, pepper, paprika, cumin, and oregano.
- Cook for 5–7 minutes until the mixture thickens and most liquid evaporates.
- Remove from heat and stir in chopped parsley.
- Allow the filling to cool completely before assembling.
Important: Do not add cheese while the filling is hot, or the pastry may become soggy.
Step 3: Assemble the Pastry Roll
- Preheat your oven to 180°C (350°F).
- Punch down the risen dough.
- Roll it out into a large rectangle about ½ cm thick.
- Spread the cooled beef mixture evenly over the dough, leaving about a 2 cm border around the edges.
- Sprinkle mozzarella and cheddar evenly over the beef layer.
- Carefully roll the dough tightly from one long side to form a log.
- Seal the edges well to prevent filling from leaking.
- Place seam-side down on a baking tray lined with parchment paper.
Step 4: Egg Wash & Finishing Touch
- Beat 1 egg with 1 tablespoon milk.
- Brush it over the top of the roll.
- Optional: Sprinkle sesame seeds or dried herbs on top.
Step 5: Bake
- Bake for 25–30 minutes
- Until golden brown and nicely puffed
If the top browns too quickly, loosely cover with aluminum foil.
