 Ingredients

 For the Dough (Soft Homemade Dough)

  • 3 cups (375g) all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast
  • 1 egg (room temperature)
  • ¼ cup (60 ml) vegetable oil or melted butter
  • 1 cup (240 ml) warm milk
  • 2–4 tablespoons warm water (if needed)
  • Shortcut: You can use 1 large sheet of store-bought puff pastry instead of homemade dough.

 For the Ground Beef Filling

  • 500g (1 lb) ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small green bell pepper, diced (optional)
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon dried oregano (optional)
  • 2 tablespoons fresh parsley, chopped

 For the Cheese Layer

  • 1 to 1½ cups shredded mozzarella cheese
  • ½ cup shredded cheddar cheese

 Step-by-Step Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine flour, sugar, salt, and instant yeast.
  2. Add the egg, oil, and warm milk.
  3. Mix until the dough begins to form.
  4. Knead for 8–10 minutes until the dough is smooth and elastic.

If the dough feels too sticky, add a little flour.
If it feels too dry, add warm water 1 tablespoon at a time.

  1. Shape into a ball and place in a lightly oiled bowl.
  2. Cover with a clean towel or plastic wrap.
  3. Let it rise in a warm place for about 1 hour, or until doubled in size.

Step 2: Cook the Ground Beef Filling

  1. Heat 1 tablespoon oil in a pan over medium heat.
  2. Add chopped onion and cook for 2–3 minutes until soft.
  3. Add garlic and cook for 30 seconds.
  4. Add ground beef and cook until fully browned, breaking it apart with a spoon.
  5. Add bell pepper, tomato paste, salt, pepper, paprika, cumin, and oregano.
  6. Cook for 5–7 minutes until the mixture thickens and most liquid evaporates.
  7. Remove from heat and stir in chopped parsley.
  8. Allow the filling to cool completely before assembling.

Important: Do not add cheese while the filling is hot, or the pastry may become soggy.

Step 3: Assemble the Pastry Roll

  1. Preheat your oven to 180°C (350°F).
  2. Punch down the risen dough.
  3. Roll it out into a large rectangle about ½ cm thick.
  4. Spread the cooled beef mixture evenly over the dough, leaving about a 2 cm border around the edges.
  5. Sprinkle mozzarella and cheddar evenly over the beef layer.
  6. Carefully roll the dough tightly from one long side to form a log.
  7. Seal the edges well to prevent filling from leaking.
  8. Place seam-side down on a baking tray lined with parchment paper.

Step 4: Egg Wash & Finishing Touch

  • Beat 1 egg with 1 tablespoon milk.
  • Brush it over the top of the roll.
  • Optional: Sprinkle sesame seeds or dried herbs on top.

Step 5: Bake

  • Bake for 25–30 minutes
  • Until golden brown and nicely puffed

If the top browns too quickly, loosely cover with aluminum foil.

For extra cheesiness, add a thin layer of cream cheese before mozzarella.

You can freeze the roll before baking (up to 1 month).
