Cheesy Ground Beef Quesadillas are a quick, comforting, and flavorful meal that’s perfect for lunch, dinner, or even a party snack. Made with seasoned ground beef, melted cheese, and crispy tortillas, this recipe is easy to customize and always a crowd-pleaser.
Ingredients:
For the beef filling:
- 1 lb (450 g) ground beef
- 1/2 onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin (optional but recommended)
- 1/4 teaspoon black pepper
- Salt to taste
- 1 tablespoon olive oil or vegetable oil
- 2 tablespoons water or beef broth (optional, for extra juiciness)
For the quesadillas:
- 6–8 large flour tortillas
- 2 cups shredded cheese (cheddar, mozzarella, Monterey Jack, or a blend)
- 1 tablespoon butter or oil (for cooking)

Instructions:
Step 1: Prepare the ingredients
Before cooking, finely chop the onion and measure all the spices. Shred the cheese if it’s not already prepared. Having everything ready will make the cooking process faster and smoother.
Step 2: Cook the onion
Heat 1 tablespoon of oil in a large skillet over medium heat. Add the chopped onion and cook for about 3–5 minutes, stirring occasionally, until it becomes soft and translucent. This step builds the base flavor of the beef filling.
Step 3: Brown the ground beef
Add the ground beef to the skillet with the onions. Use a spatula or wooden spoon to break the meat into small pieces. Cook for 6–8 minutes, stirring occasionally, until the beef is fully browned and no longer pink. Drain excess fat if necessary.
Step 4: Season the beef
Lower the heat slightly and add garlic powder, chili powder, paprika, cumin (if using), black pepper, and salt. Stir well to evenly coat the beef with the spices. Add 2 tablespoons of water or beef broth if the mixture looks dry. Let it simmer for 2–3 minutes so the flavors blend together. Remove from heat.
Step 5: Assemble the quesadillas
Lay a tortilla flat on a clean surface. Sprinkle a generous layer of shredded cheese on one half of the tortilla. Add a layer of the seasoned ground beef mixture, then top with a little more cheese. Fold the tortilla in half to close.
Step 6: Cook the quesadillas
Heat a clean skillet or pan over medium heat and lightly grease it with butter or oil. Place the folded quesadilla in the pan and cook for 2–3 minutes per side, until the tortilla is golden brown and crispy and the cheese is fully melted. Repeat with the remaining tortillas.
Step 7: Slice and serve
Remove the quesadillas from the pan and let them rest for a minute. Slice into wedges and serve warm.
