Sausage, Peppers, and Onions is a beloved Italian-American classic that has stood the test of time. With juicy Italian sausage, sweet bell peppers, and tender onions simmered together in a rich, savory tomato-based sauce, this dish is both simple and deeply flavorful.

  • 1 lb (450 g) Italian sausage (mild or hot)
  • 2 tablespoons olive oil
  • 3 bell peppers (red, green, or yellow), sliced
  • 2 large onions, sliced
  • 3 cloves garlic, minced

Sauce & Seasonings

  • 1 can (14–15 oz) crushed tomatoes or tomato sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste

Optional Add-Ins

  • ½ teaspoon sugar (to balance acidity)
  • Fresh basil or parsley, chopped
  • Grated Parmesan cheese, for serving

 Instructions

1. Brown the Sausage

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausages and cook until browned on all sides, about 6–8 minutes. The sausages do not need to be fully cooked at this stage. Remove them from the pan and set aside.

2. Cook the Peppers and Onions

Add the remaining olive oil to the same skillet. Add the sliced onions and bell peppers. Cook for 8–10 minutes, stirring occasionally, until they soften and begin to caramelize.

3. Add Garlic and Seasoning

Stir in the minced garlic and cook for about 30 seconds until fragrant. Add Italian seasoning, oregano, red pepper flakes (if using), salt, and black pepper.

4. Make the Sauce

Pour in the crushed tomatoes or tomato sauce. Stir well, scraping up any browned bits from the bottom of the pan for extra flavor. Add a pinch of sugar if needed.

5. Simmer with Sausage

Slice the browned sausages into chunks (or leave them whole if preferred) and return them to the skillet. Reduce heat to low, cover, and let simmer for 20–25 minutes, until the sausages are fully cooked and the sauce thickens.

6. Finish and Serve

Taste and adjust seasoning as needed. Garnish with fresh herbs and serve hot.

  • Use a mix of red and green peppers for the best balance of sweetness and flavor
  • Browning the sausage first adds depth and richness to the sauce
  • Simmering slowly allows the flavors to fully develop
  • If the sauce thickens too much, add a splash of water or broth
