Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup milk
- 2 cups uncooked pasta (penne, rotini, shells, or elbow macaroni)
- 1 packet (1 oz) ranch seasoning mix
- 1½–2 cups shredded cheddar cheese
- ½ cup heavy cream or sour cream (optional, for extra creaminess)
- Salt and black pepper, to taste
- 1 tablespoon olive oil (optional)
Optional Add-Ins
- Cooked bacon crumbles
- Chopped parsley or green onions
- Red pepper flakes for heat
Instructions
- Brown the beef
In a large pot or deep skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is fully browned and the onion is soft, about 5–7 minutes. Drain excess grease if needed. - Add garlic
Stir in the minced garlic and cook for 30 seconds until fragrant. - Add liquids and seasoning
Pour in the beef broth and milk. Stir in the ranch seasoning mix, salt, and black pepper. - Add the pasta
Add the uncooked pasta to the pot. Stir well to make sure the pasta is mostly submerged in the liquid. - Simmer
Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer for 12–15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed. - Make it creamy
Stir in the heavy cream or sour cream (if using), then add the shredded cheddar cheese. Stir until the cheese is fully melted and the sauce is creamy. - Taste and adjust
Taste and adjust seasoning with more salt or pepper if needed. - Serve
Remove from heat and let sit for 2–3 minutes before serving.
