 Ingredients

  • 2 cups cooked rice (slightly undercooked works best)
  • 2 cups cooked chicken, diced or shredded
  • 2 cups broccoli florets, lightly steamed
  • 1 can cream of chicken soup (or cream of mushroom)
  • 1 cup milk
  • 2 cups shredded cheddar cheese (or cheese of choice)
  • 2 tablespoons butter
  • Salt and black pepper, to taste
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon onion powder (optional)

 Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a large bowl, combine the rice, chicken, and broccoli.
  3. Add the cream soup, milk, half of the cheese, butter, salt, pepper, and seasonings.
  4. Mix until everything is well combined.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Sprinkle the remaining cheese over the top.
  7. Bake for 40–45 minutes, or until bubbly and golden on top.
  8. Let rest for 5 minutes before serving.

 Tips & Variations

  • Add breadcrumbs or crushed crackers on top for extra crunch.
  • Use mozzarella, Colby-Jack, or a cheese blend for different flavors.
  • Great for meal prep — reheats well and freezes nicely.
  • You can add mushrooms or carrots for extra veggies.
