Broccoli, Rice, Chicken, and Cheese Casserole

Ingredients
- 2 cups cooked rice (slightly undercooked works best)
- 2 cups cooked chicken, diced or shredded
- 2 cups broccoli florets, lightly steamed
- 1 can cream of chicken soup (or cream of mushroom)
- 1 cup milk
- 2 cups shredded cheddar cheese (or cheese of choice)
- 2 tablespoons butter
- Salt and black pepper, to taste
- ½ teaspoon garlic powder (optional)
- ½ teaspoon onion powder (optional)
Instructions
- Preheat oven to 350°F (180°C).
- In a large bowl, combine the rice, chicken, and broccoli.
- Add the cream soup, milk, half of the cheese, butter, salt, pepper, and seasonings.
- Mix until everything is well combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Sprinkle the remaining cheese over the top.
- Bake for 40–45 minutes, or until bubbly and golden on top.
- Let rest for 5 minutes before serving.

- Add breadcrumbs or crushed crackers on top for extra crunch.
- Use mozzarella, Colby-Jack, or a cheese blend for different flavors.
