Time & Yield
- Preparation Time: 10–15 minutes
- Cooking Time: 30–35 minutes
- Total Time: About 45–50 minutes
- Servings: 3–4 people
Ingredients
Main Ingredients
- 4 large potatoes (russet or Yukon gold work best)
- 1–2 large onions, sliced
- 14–18 oz (400–500 g) smoked Polish sausage (kielbasa), sliced into rounds
- 3–4 tablespoons vegetable oil or olive oil
Seasonings
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon turmeric (optional, for color)
- 2 cloves garlic, minced (optional)
- 1 teaspoon sugar (optional, helps caramelize onions)
Optional Garnishes
- Fresh parsley, chopped
- Green onions, sliced
Step-by-Step Instructions
Step 1: Prepare the Potatoes
Wash and peel the potatoes. Cut them into even-sized slices or cubes so they cook evenly.
If you want extra crispy potatoes, place them in a bowl of cold water and soak for 10 minutes. Drain well and pat dry with a clean kitchen towel or paper towels. This removes excess starch and helps them crisp up when frying.
Step 2: Fry the Potatoes
Heat 2 tablespoons of oil in a large, heavy skillet over medium heat.
Add the potatoes in a single layer. Do not overcrowd the pan—cook in batches if necessary.
Let the potatoes cook undisturbed for a few minutes to develop a golden crust, then stir occasionally.
Cook for 12–15 minutes, until the potatoes are tender on the inside and crispy on the outside.
Season lightly with salt and pepper.
Remove the potatoes from the skillet and set them aside.
Step 3: Brown the Smoked Sausage
In the same skillet, add a little more oil if needed.
Add the sliced smoked Polish sausage and cook over medium heat for 5–7 minutes.
Stir occasionally until the sausage is nicely browned and slightly crispy around the edges.
The sausage will release flavorful oils—this adds a lot of taste to the dish.
Remove the sausage from the skillet and set aside.
Step 4: Cook the Onions
Add the sliced onions to the skillet.
Cook over medium to medium-low heat, stirring occasionally, for about 8–10 minutes until soft and golden.
For deeper flavor, add 1 teaspoon of sugar to help the onions caramelize.
Add garlic (if using), paprika, turmeric, salt, and black pepper. Stir well and cook for 1–2 more minutes until fragrant.
Step 5: Combine Everything
Return the fried potatoes and sausage to the skillet with the onions.
Gently mix everything together so the flavors combine evenly.
Lower the heat and cook for another 5 minutes, allowing all ingredients to heat through and absorb the seasoning. Taste and adjust salt or pepper if needed.
How to Serve
Serve this dish hot, straight from the skillet. It pairs perfectly with:
- Fried or scrambled eggs
