- 4 cups chicken or beef broth

Instructions
1. Brown the Ground Beef
In a large skillet over medium-high heat, cook the ground beef until browned and no longer pink. Drain excess fat.
Add the chopped onion and minced garlic to the skillet and sauté for about 5 minutes, until the onion becomes soft and translucent.
2. Add Ingredients to the Crockpot
Transfer the cooked beef mixture to the crockpot.
Add the diced potatoes, sliced carrots, and sliced celery.
3. Add Broth and Seasonings
Pour in the broth. Add dried thyme, dried parsley, paprika, salt, and pepper.
Stir well to combine all ingredients evenly.
4. Slow Cook
Cover and cook:
- On Low: 6–8 hours
- On High: 3–4 hours
Cook until the potatoes and vegetables are fork-tender.
5. Make It Creamy
Stir in the heavy cream, shredded cheddar cheese, and milk.
If you prefer a thicker soup, add the cornstarch slurry and stir well.
Continue cooking on low for 15–20 minutes, until the cheese is fully melted and the soup is rich and creamy.

Ladle the hot soup into bowls. Garnish with fresh parsley and extra cheddar cheese if desired.
Serve warm with crusty bread or dinner rolls.
