Chicken Bacon Ranch Quesadillas are crispy on the outside, cheesy on the inside, and packed with bold, savory flavor. Made with tender shredded chicken, crispy bacon, melted cheddar cheese, and creamy ranch dressing, these quesadillas are quick to prepare and perfect for lunch, dinner, or even game day snacks. Ingredients

  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 6 slices bacon, cooked until crispy and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese (optional, for extra meltiness)
  • 1/3 cup ranch dressing
  • 4 large flour tortillas
  • 1 tablespoon butter or olive oil (for cooking)
  • Optional add-ins:
    • Chopped green onions
    • Diced tomatoes
    • Sliced jalapeños
    • Fresh parsley

Instructions

Step 1: Prepare the Filling

In a medium bowl, combine the shredded chicken, crumbled bacon, cheddar cheese, mozzarella cheese (if using), and ranch dressing.
Mix well until all ingredients are evenly coated and the filling looks creamy and cheesy.

Step 2: Heat the Skillet

Heat a large skillet or griddle over medium heat.
Add a small amount of butter or olive oil and let it melt, coating the surface of the pan.

Step 3: Assemble the Quesadillas

Place one tortilla flat in the skillet.
Spread an even layer of the chicken bacon ranch mixture over half of the tortilla.
Fold the tortilla in half to create a half-moon shape.

Repeat with the remaining tortillas and filling.

Step 4: Cook Until Crispy

Cook each quesadilla for 2–3 minutes per side, or until the tortilla is golden brown and crispy and the cheese inside is fully melted.
Flip carefully using a spatula to keep the filling inside.

Step 5: Slice and Serve

Remove the quesadillas from the skillet and let them rest for 1–2 minutes.
Slice into wedges and serve warm.

  • Make it spicy: Add hot sauce, jalapeños, or crushed red pepper flakes.
  • Healthier option: Use whole-wheat tortillas and light ranch dressing.
