Ingredients
Pasta & Meat Sauce
- 500 g Stellini pasta
- 700 g ground meat (beef, pork, chicken, or turkey)
- 200 g tomato sauce (passata or marinara)
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- Salt, to taste
- Black pepper or meat seasoning, to taste
- Optional: 1 tablespoon vegetable oil
Béchamel Sauce
- 50 g unsalted butter
- 15 g all-purpose flour
- 500 ml whole milk
- A pinch of powdered nutmeg (optional)
- Salt, to taste
Topping
- 100 g shredded hard mozzarella cheese
Method (Preparation & Cooking)
1. Cook the Pasta
Bring a large pot of well-salted water to a rolling boil. Add the Stellini pasta and cook until al dente. Because Stellini is very small, this will only take a few minutes. Drain immediately and set aside to prevent overcooking.
2. Prepare the Béchamel Sauce
In a small saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to form a smooth roux without browning.
Slowly pour in the milk while whisking constantly to avoid lumps. Continue cooking and stirring until the sauce thickens into a creamy, silky consistency. Season with salt and a pinch of nutmeg. Remove from heat and set aside.
3. Make the Meat Ragu
In a large skillet or pan, heat a small amount of vegetable oil (optional) over medium heat. Add the chopped onion and sauté until soft and translucent.
Add the minced garlic and cook for 30 seconds until fragrant. Add the ground meat and cook until browned, breaking it apart with a spoon. Season with salt and meat seasoning.
Stir in the tomato sauce and allow the mixture to simmer for 5–7 minutes until slightly thickened and rich in flavor.
4. Assemble the Pasta Bake
Preheat the oven to 180°C (350°F).
In a large mixing bowl, combine the cooked pasta with the meat ragu. Pour in the Béchamel sauce and mix gently until everything is evenly coated.
Transfer the mixture to a greased baking dish. Sprinkle the shredded mozzarella evenly over the top.
5. Bake to Perfection
Place the dish in the preheated oven and bake for 10–15 minutes, or until the cheese is melted and lightly golden on top.
Remove from the oven and allow to rest for a few minutes before serving.
