A delicious twist on two American classics: the rich, cheesy flavors of a Philly cheesesteak combined with the saucy, comforting texture of sloppy joes. This recipe is quick, filling, and perfect for weeknight dinners.

Ingredients

For the meat filling:

  • 1 lb (450–500 g) ground beef
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • Salt and black pepper (to taste)

For the sauce:

  • 1 tablespoon tomato paste
  • 1 tablespoon ketchup (optional, for slight sweetness)
  • 1 teaspoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth (or chicken broth)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)

For assembling:

  • 4–6 hamburger buns or sandwich rolls
  • 6–8 slices provolone, mozzarella, or cheddar cheese

 Instructions

1. Cook the vegetables

Heat olive oil in a large skillet over medium heat. Add the sliced onions and green bell peppers. Cook for about 5–7 minutes, stirring occasionally, until they become soft and slightly caramelized.

Add the minced garlic and cook for about 30 seconds, just until fragrant (be careful not to burn it).

2. Brown the ground beef

Add the ground beef to the skillet with the vegetables. Break it apart using a wooden spoon or spatula.

Cook until the beef is fully browned and no longer pink, about 6–8 minutes. Drain excess fat if necessary.

Season with salt and black pepper to taste.

3. Make the sauce

Stir in the tomato paste, ketchup (if using), mustard, and Worcestershire sauce. Mix well so the beef is fully coated.

Pour in the beef broth and stir everything together. Let it simmer for 3–5 minutes so the flavors blend nicely.

4. Thicken the mixture

Add the cornstarch slurry (cornstarch + water) to the skillet. Stir continuously as the sauce thickens.

Cook for another 2–3 minutes until the mixture becomes rich and slightly thick, but still saucy (not dry).

5. Add the cheese

Place slices of cheese directly over the hot meat mixture. Let them melt for about 1–2 minutes.

You can either leave the cheese melted on top or stir it into the mixture for a creamier texture.

6. Toast and assemble

Lightly toast the buns in a pan or oven for better texture.

Spoon a generous amount of the cheesy meat mixture onto each bun. Serve immediately while hot.

  • Add sliced mushrooms for extra flavor and a more authentic Philly cheesesteak taste.
  • For a spicy kick, include red pepper flakes or hot sauce.
  • Use provolone cheese for a more classic flavor, or mozzarella for extra meltiness.
  • Don’t overcook the sauce—you want it juicy, not dry.
