 Easy Creamy Corn Casserole

A rich, comforting, and ultra-creamy corn casserole that’s perfect as a side dish for family dinners, holidays, or potlucks. This recipe combines sweet corn, creamy textures, and cheesy goodness into one irresistible baked dish.

 Ingredients

  • 1 can (15 oz / ~425 g) whole kernel corn, drained
  • 1 can (15 oz / ~425 g) creamed corn
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1/2 cup unsalted butter, melted
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup cornmeal (or fine semolina as an alternative)
  • 2 large eggs
  • 2 tablespoons granulated sugar (optional, for a slightly sweet flavor)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon baking powder

 Instructions

1. Preheat the Oven

Preheat your oven to 350°F (180°C). Lightly grease a baking dish (8×8-inch or similar) with butter or cooking spray to prevent sticking.

2. Prepare the Wet Mixture

In a large mixing bowl, whisk together:

  • Heavy cream
  • Melted butter
  • Eggs

Mix until the texture is smooth and fully combined.

3. Add the Corn

Stir in:

  • Drained whole corn
  • Creamed corn

Mix well so everything is evenly distributed.

4. Combine the Dry Ingredients

In the same bowl, add:

  • Cornmeal
  • Sugar (if using)
  • Salt
  • Black pepper
  • Baking powder

Gently mix until there are no lumps and the batter looks thick but smooth.

5. Add Cheese

Fold in half of the shredded cheese into the mixture. This gives the casserole a rich, cheesy interior.

6. Assemble the Casserole

Pour the mixture into the prepared baking dish and spread it evenly.
Sprinkle the remaining cheese over the top for a golden, cheesy crust.

7. Bake

Place the dish in the oven and bake for 40–50 minutes, or until:

  • The top is golden brown
  • The center is set (not too jiggly)
  • A knife inserted in the center comes out mostly clean

8. Cool and Serve

Let the casserole rest for 5–10 minutes before serving. This helps it firm up and makes slicing easier.

Serve warm and enjoy!
