Slow Cooker Potato and Onion Bake
Ingredients
- 4–6 medium to large potatoes (Yukon Gold or Russet work best)
- 2–3 large onions
- 3–4 tablespoons butter, melted
- Salt, to taste
- Black pepper, to taste
- Optional: dried thyme, rosemary, or garlic powder

Instructions
1. Prepare the Slow Cooker
Start by lightly greasing the inside of your slow cooker with a small amount of butter. This step helps prevent sticking and adds an extra layer of flavor as the dish cooks slowly over time.
2. Prepare the Vegetables
Wash the potatoes thoroughly. You can either peel them or leave the skin on for a more rustic texture and added nutrients.
Slice the potatoes into thin, even rounds (about 2–3 mm thick). Keeping the slices uniform ensures even cooking.
Next, peel the onions. Cut them in half from top to bottom, then slice them into thin strips. Thin slicing allows the onions to soften and caramelize beautifully during cooking.
3. Layer the Ingredients
Begin by drizzling 1–2 teaspoons of melted butter at the bottom of the slow cooker.
Add a layer of sliced potatoes, slightly overlapping them.
Follow with a layer of sliced onions.
Season lightly with salt and black pepper. If using herbs like thyme or rosemary, sprinkle a small amount over the layer.
Drizzle a little melted butter over the top.
Repeat this layering process (potatoes → onions → seasoning → butter) until all the ingredients are used. Finish with a final layer of potatoes and a generous drizzle of butter on top.
4. Cook the Dish
Cover the slow cooker with its lid.
Cook on:
- LOW for 6–7 hours, or
- HIGH for 3–4 hours
The dish is ready when the potatoes are fork-tender and the onions are soft, sweet, and lightly caramelized.
5. Let It Rest
Once cooking is complete, remove the lid and allow the dish to rest for about 10 minutes.
This step helps excess steam escape and allows the buttery juices to thicken slightly, improving the overall texture.
6. Serve
To serve, use a large spoon to scoop all the way down through the layers so each portion includes both potatoes and onions.
Spoon some of the buttery cooking juices over each serving for extra flavor.
Tips and Variations
- Add grated cheese (such as cheddar or mozzarella) between layers for a richer, creamier version.
- Include minced garlic for deeper flavor.
- For a crisp top, transfer to an oven-safe dish and broil for a few minutes after cooking.
- You can also add cream or milk to create a more indulgent, gratin-style dish.
