Sizzling Chinese Pepper Steak with Onions is a classic Chinese-style stir-fry made with tender beef slices, crisp bell peppers, sweet onions, and a rich savory sauce.  Ingredients

For the Beef Marinade

  • 400–500 g beef steak (flank steak, sirloin, or rump steak)
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • ½ teaspoon ground black pepper
  • 1 teaspoon vegetable oil

For the Vegetables

  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced (optional)

For the Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce (optional but recommended)
  • ½ cup water or beef broth
  • 1 teaspoon cornstarch
  • 1 teaspoon sugar (optional)
  • ½ to 1 teaspoon freshly ground black pepper (adjust to taste)

For Cooking

  • 2 tablespoons vegetable oil

 Preparation

Step 1: Prepare the Beef

  1. Slice the beef thinly against the grain. This is very important to keep the meat tender.
  2. Place the beef in a bowl and add soy sauce, cornstarch, sesame oil, black pepper, and vegetable oil.
  3. Mix well until all the beef slices are evenly coated.
  4. Cover and marinate for 15–30 minutes.

Tip: Slightly freezing the beef for 15 minutes makes slicing much easier.

Step 2: Prepare the Sauce

  1. In a small bowl, combine soy sauce, oyster sauce, hoisin sauce, water (or broth), sugar, cornstarch, and black pepper.
  2. Stir well until the cornstarch is fully dissolved.
  3. Set aside.

Step 3: Sear the Beef

  1. Heat a wok or large frying pan over high heat.
  2. Add 1 tablespoon of vegetable oil.
  3. Add the marinated beef in a single layer.
  4. Stir-fry quickly for 1–2 minutes until the beef is browned but not overcooked.
  5. Remove the beef from the pan and set aside.

Step 4: Cook the Vegetables

  1. In the same pan, add the remaining oil.
  2. Add garlic and ginger and stir-fry for 10–15 seconds until fragrant.
  3. Add the onions and bell peppers.
  4. Stir-fry for 2–3 minutes until slightly softened but still crisp.

Step 5: Combine and Sizzle

  1. Return the cooked beef to the pan.
  2. Pour in the prepared sauce.
  3. Stir well to coat the beef and vegetables.
  4. Cook for 2–3 minutes until the sauce thickens and becomes glossy.
  5. Taste and adjust seasoning if needed.
