Classic Cinnamon Roll Bites (Soft, Sweet, and Irresistible)
These Classic Cinnamon Roll Bites are everything you love about traditional cinnamon rolls—but in fun, bite-sized form. They’re soft, fluffy, packed with cinnamon-sugar flavor, and finished with a sweet vanilla glaze. Perfect for breakfast, brunch, holidays, or anytime you want a warm homemade treat.
Because they’re smaller than full cinnamon rolls, they bake faster and are great for sharing. One bite leads to another, and before you know it, they’re gone!
Ingredients
For the Dough
- 3 cups all-purpose flour
- 2¼ teaspoons instant yeast (1 packet)
- ¼ cup granulated sugar
- ½ teaspoon salt
- ¾ cup warm milk (about 110°F / 43°C)
- ¼ cup unsalted butter, melted
- 1 large egg
For the Cinnamon Filling
- ½ cup brown sugar, packed
- 2 tablespoons ground cinnamon
- ¼ cup unsalted butter, softened
For the Vanilla Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk or cream
- ½ teaspoon vanilla extract
Instructions
Step 1: Make the Dough
In a large mixing bowl, combine:
- Flour
- Instant yeast
- Granulated sugar
- Salt
Mix well.
Add the warm milk, melted butter, and egg. Stir until a soft dough forms.
Step 2: Knead the Dough
Turn the dough out onto a lightly floured surface. Knead for 8–10 minutes, until smooth, soft, and elastic. Add small amounts of flour if the dough feels too sticky.
Form into a ball.
Step 3: First Rise
Place the dough in a lightly greased bowl, turning once to coat the top. Cover with a clean towel or plastic wrap.
Let rise in a warm place for 1 hour, or until doubled in size.
Step 4: Prepare the Filling
In a small bowl, mix the brown sugar and cinnamon together. Set aside.
Step 5: Roll and Fill
Punch down the dough and roll it out on a floured surface into a rectangle, about 12×16 inches.
Spread the softened butter evenly over the dough. Sprinkle the cinnamon-sugar mixture evenly on top.
Step 6: Shape the Bites
Roll the dough tightly from the long side into a log. Cut into 1-inch pieces.
Place the pieces cut-side up into a greased baking dish or lined baking pan, leaving a little space between each one.
Step 7: Second Rise
Cover the pan and let the cinnamon roll bites rise for 20–30 minutes, until puffy.
Step 8: Bake
Preheat the oven to 350°F (175°C).
Bake for 15–18 minutes, or until lightly golden and cooked through.
Step 9: Make the Glaze
While the bites are baking, whisk together:
- Powdered sugar
- Milk
- Vanilla extract
Adjust milk for desired thickness.
Step 10: Glaze and Serve
Remove the cinnamon roll bites from the oven and drizzle the glaze over them while still warm.
Serve immediately.
