 Ingredients

  • 1 large package lemon Jell-O
  • 2 cups boiling water
  • 1 cup cold water
  • 1 package (8 oz / 225 g) cream cheese, softened
  • 1 container (8 oz / 225 g) whipped topping (Cool Whip), thawed
  • 1 cup mini marshmallows
  • 1 cup crushed pineapple, well drained
  • 1 tablespoon fresh lemon juice (optional, for extra tang)
  • Lemon zest for garnish (optional)

 Instructions

Step 1: Prepare the Lemon Jell-O

  1. In a large mixing bowl, pour the lemon Jell-O powder.
  2. Add 2 cups of boiling water.
  3. Stir continuously for 2–3 minutes until the gelatin is completely dissolved.
  4. Add 1 cup cold water and stir.
  5. Let the mixture cool to room temperature (do not refrigerate yet).

Step 2: Add the Cream Cheese

  1. Cut the softened cream cheese into small cubes.
  2. Gradually whisk or beat the cream cheese into the cooled Jell-O mixture.
  3. Mix until smooth and creamy, with no lumps.

This step gives the dessert its rich, fluffy base.

Step 3: Fold in the Fluff

  1. Gently fold in the whipped topping using a spatula.
  2. Add mini marshmallows and crushed pineapple.
  3. Stir gently until everything is evenly combined.

Folding keeps the dessert light and airy.

Step 4: Chill

  1. Pour the mixture into a serving dish or individual cups.
  2. Cover and refrigerate for at least 3–4 hours, or until fully set.

  • Sprinkle lemon zest on top
