One bite of this cake and it’s pure strawberry happiness—soft, moist layers bursting with strawberry flavor and dripping with creamy pink goodness. Made with a strawberry cake mix but upgraded with rich ingredients like sour cream and brown sugar, this dessert tastes completely homemade and bakery-worthy. Perfect for birthdays, Valentine’s Day, baby showers, or anytime you’re craving a sweet strawberry treat.

 Ingredients

Strawberry Cake

  • 1 box strawberry cake mix
  • ¾ cup vegetable oil
  • 4 large eggs, room temperature
  • 1 cup sour cream
  • ½ cup brown sugar, packed

Creamy Pink Glaze (Optional but Highly Recommended)

  • 4 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • 1½ cups powdered sugar
  • 2–3 tablespoons strawberry milk or strawberry puree
  • ½ teaspoon vanilla extract
  • Pink food coloring (optional)

Optional Garnishes

  • Fresh strawberries
  • White chocolate shavings
  • Strawberry sprinkles

Instructions

Step 1: Prepare the Oven and Pan

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9×13-inch baking pan, Bundt pan, or two round cake pans.
  3. Set aside.

Step 2: Make the Strawberry Cake Batter

  1. In a large mixing bowl, add the strawberry cake mix.
  2. Pour in the vegetable oil and crack in the eggs.
  3. Add the sour cream and packed brown sugar.
  4. Beat with a mixer on medium speed for 2–3 minutes, until smooth and creamy.

The sour cream adds moisture, while the brown sugar deepens the strawberry flavor.

Step 3: Bake

  1. Pour the batter evenly into the prepared pan.
  2. Smooth the top with a spatula.
  3. Bake for:
    • 35–40 minutes (9×13 pan)
    • 40–45 minutes (round pans)
    • 45–50 minutes (Bundt pan)
  4. Insert a toothpick into the center—if it comes out clean, the cake is done.

Step 4: Cool the Cake

  1. Let the cake cool in the pan for 15 minutes.
  2. Transfer to a wire rack and allow to cool completely before glazing.

 Creamy Pink Glaze

  1. In a bowl, beat cream cheese and butter until smooth.
  2. Add powdered sugar gradually.
  3. Mix in strawberry milk (or puree) and vanilla extract.
  4. Beat until creamy and pourable.
  5. Add a drop of pink food coloring if desired.

Drizzle generously over the cooled cake for that signature creamy pink finish.
