Ingredients

For the Potatoes

  • 1 lb (450 g) baby potatoes, halved or quartered
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano or thyme

For the Steak Bites

  • 1 lb (450 g) sirloin steak, ribeye, or strip steak
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon onion powder

For the Garlic Butter

  • 3 tablespoons unsalted butter
  • 4 cloves garlic, finely minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice (optional, for brightness)

Instructions

Step 1: Prepare the Potatoes

  1. Wash and cut the baby potatoes into evenly sized pieces.
  2. Place them in a bowl and toss with olive oil, salt, black pepper, paprika, garlic powder, and dried herbs.
  3. Preheat the air fryer to 200°C (400°F).
  4. Add the potatoes to the air fryer basket in a single layer.
  5. Cook for 15–18 minutes, shaking the basket halfway through, until the potatoes are golden brown and crispy on the outside and tender inside.
  6. Remove and set aside.

Step 2: Prepare the Steak Bites

  1. Cut the steak into bite-sized cubes, about 1–1½ inches.
  2. Pat the steak dry with paper towels to ensure a good sear.
  3. Toss the steak bites with olive oil, salt, black pepper, paprika, and onion powder.
  4. Add the steak bites to the air fryer basket (do not overcrowd).
  5. Cook at 200°C (400°F) for 6–8 minutes, shaking once, depending on desired doneness:
    • 6 minutes for medium-rare
    • 7 minutes for medium
    • 8 minutes for well-done

Step 3: Make the Garlic Butter

  1. While the steak is cooking, melt the butter in a small pan over low heat.
  2. Add the minced garlic and cook for 30–60 seconds, just until fragrant.
  3. Remove from heat and stir in chopped parsley and lemon juice.

Combine Everything

  1. Return the cooked potatoes to the air fryer basket.
  2. Add the steak bites on top.
  3. Drizzle the garlic butter evenly over the steak and potatoes.
  4. Toss gently to coat everything.
  5. Air fry for 2 additional minutes to bring all flavors together.

Serving Suggestions

  • Serve immediately while hot and juicy.
  • Pair with:
    • A fresh green salad
    • Steamed vegetables
    • Garlic bread
    • A creamy dipping sauce (garlic aioli or sour cream)

Storage and Reheating

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the air fryer at 180°C (350°F) for 3–4 minutes to restore crispiness.
  • Avoid microwaving if possible, as it softens the steak.

Tips for Best Results

  • Choose well-marbled steak for maximum juiciness.
  • Do not overcrowd the air fryer basket; cook in batches if needed.
  • Always use fresh garlic for the best flavor.
  • Let the steak rest for a minute before serving to keep it tender.
