  • 1 smoked ham hock or ham bone (or 1½ cups diced ham)
  • 1 bay leaf
  • 1 teaspoon salt (add more to taste at the end)
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • 6–7 cups water or low-sodium chicken broth
  • 1 tablespoon olive oil (optional)

 Step-by-Step Instructions

1 Prepare the Beans

  1. Sort through the dried beans and remove any small stones or damaged beans.
  2. Rinse thoroughly under cold running water.

Optional Soaking (Recommended):

  • Place beans in a large bowl and cover with plenty of water.
  • Soak overnight (8–12 hours).
  • Drain and rinse before cooking.
    Soaking helps beans cook faster and more evenly.

2 Add Ingredients to the Crock Pot

  1. Place the soaked (or unsoaked) beans into the slow cooker.
  2. Add the chopped onion, garlic, carrots, and celery.
  3. Add the ham hock or diced ham.
  4. Drop in the bay leaf, black pepper, smoked paprika, and thyme.
  5. Pour in the water or chicken broth until beans are fully covered.

Do not add salt at the beginning if using unsoaked beans — add it near the end to avoid tough beans.

3 Slow Cook

  • Cover and cook:
    • Low heat: 7–8 hours
    • High heat: 4–5 hours

Beans should be tender and creamy when done.

4 Final Seasoning

  1. Remove the ham hock and bay leaf.
  2. If using a ham hock, shred the meat and return it to the crock pot.
  3. Add salt to taste and stir gently.
  4. For thicker beans, mash a small portion against the side of the pot and stir.
