 Ingredients

  • 2 cans (565 g / 20 oz each) crushed pineapple, undrained
  • 3 large eggs
  • 200 g (1 cup) granulated sugar
  • 60 g (½ cup) all-purpose flour
  • 60 g (¼ cup) melted butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • (Optional) ½ teaspoon cinnamon or nutmeg
  • (Optional topping) powdered sugar or whipped cream

 Step-by-Step Instructions

1 Preheat and Prepare

  1. Preheat your oven to 180°C (350°F).
  2. Lightly grease a medium baking dish with butter or cooking spray.

2 Mix the Batter

  1. In a large mixing bowl, crack the eggs and whisk until smooth.
  2. Add the sugar and continue whisking until well combined and slightly pale.
  3. Gradually whisk in the flour, making sure there are no lumps.
  4. Add the melted butter, vanilla extract, and salt.
  5. Mix until the batter is smooth and creamy.

3 Add the Pineapple

  1. Pour the crushed pineapple with all its juice into the batter.
  2. Gently stir until the pineapple is evenly distributed.
  3. The mixture will be loose and custard-like — this is normal.

4 Bake

  1. Pour the mixture into the prepared baking dish.
  2. Smooth the top with a spatula.
  3. Place the dish in the preheated oven.
  4. Bake for 45–50 minutes, or until the top is golden and the center is set.
    • A knife inserted in the center should come out mostly clean.

5 Cool and Serve

  1. Remove from the oven and let cool for 10–15 minutes.
  2. The bake will firm up slightly as it cools.
  3. Serve warm or at room temperature.
