Time & Yield
- Prep Time: 15 minutes
- Bake Time: 30–35 minutes
- Total Time: About 50 minutes
- Servings: 4–6 people
Ingredients
Casserole
- 1½ lbs (700 g) fresh asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup milk
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Salt and black pepper, to taste
Optional Topping
- ½ cup breadcrumbs or crushed crackers
- 2 tablespoons melted butter
Instructions
1 Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a baking dish (9×13-inch or similar) with butter or nonstick spray.
2 Prepare the Asparagus
Bring a large pot of salted water to a boil. Add the asparagus and blanch for 2–3 minutes until just tender but still bright green. Drain immediately and set aside.
(This step helps keep the asparagus tender without becoming mushy.)
3 Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Add the minced garlic and cook for about 30 seconds, until fragrant.
Pour in the heavy cream and milk, stirring constantly. Let the mixture gently warm (do not boil).
Lower the heat and add the cheddar, mozzarella, and Parmesan cheeses. Stir until fully melted and smooth. Season with salt and black pepper to taste.
4 Assemble the Casserole
Place the blanched asparagus evenly in the prepared baking dish. Pour the warm cheese sauce over the asparagus, making sure everything is well coated.
If using the topping, mix breadcrumbs with melted butter and sprinkle evenly over the casserole.
5 Bake
Place the casserole in the preheated oven and bake for 30–35 minutes, or until:
- The sauce is bubbly
- The top is lightly golden
- The asparagus is tender
For extra browning, broil for 2–3 minutes at the end (watch closely).
6 Rest & Serve
Remove from the oven and let the casserole rest for 5 minutes before serving. This helps the sauce thicken slightly.
Tips for Best Results
- Use fresh asparagus for the best texture and flavor
- Shred your own cheese for smoother melting
- Add cooked bacon bits or mushrooms for extra flavor
- Do not overcook the asparagus during blanching
