 Creamy Beef Burritos (Rich, Cheesy & Comforting)

 

These creamy beef burritos are packed with seasoned ground beef, smooth refried beans, and a rich creamy sauce, all wrapped in warm tortillas. Perfect for a family dinner, meal prep, or even freezing for later.

 Ingredients

For the Beef Filling:

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 can (15 oz) refried beans
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder (optional, for heat)

For the Creamy Sauce:

  • 1 cup sour cream
  • 1/2 cup heavy cream (or milk for lighter version)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 2 tbsp cream cheese (optional but extra creamy )

For Assembling:

  • 6–8 large flour tortillas
  • Extra shredded cheese (optional)
  • Chopped parsley or cilantro (optional garnish)

Instructions

1 Cook the Beef

In a large skillet over medium heat, add the ground beef and diced onion. Cook for about 6–8 minutes until the beef is browned and the onion is soft. Drain excess fat if needed.

Add garlic, salt, pepper, paprika, cumin, and chili powder. Stir well and cook for another 1–2 minutes until fragrant.

2 Add the Beans

Stir the refried beans into the beef mixture. Mix until everything is well combined and creamy. Reduce heat to low and let it simmer for 5 minutes.

3 Make It Creamy

Lower the heat and add sour cream, heavy cream, cream cheese, and shredded cheese. Stir slowly until the cheese melts and the filling becomes rich and smooth. Taste and adjust seasoning.

4 Warm the Tortillas

Warm tortillas in a pan or microwave so they’re soft and easy to roll.

5 Assemble the Burritos

Spoon the creamy beef mixture into the center of each tortilla. Add extra cheese if you like. Fold in the sides, then roll tightly.

6 Optional (But Fire ): Toast Them

Place burritos seam-side down in a hot pan for 1–2 minutes per side until golden and slightly crispy.

Serving Ideas

  • Serve with rice, salad, or tortilla chips
  • Top with extra sour cream or salsa
  • Add avocado or guacamole for extra creaminess

  • Swap beef with chicken or ground turkey
  • Add corn or diced bell peppers for texture
