 Strawberries and Cream Dream Layer Cheesecake Cake

 

A stunning dessert made with layers of soft vanilla cake, creamy cheesecake, and fresh strawberry filling. Perfect for celebrations or when you want an impressive homemade cake.

 Ingredients

 Cheesecake Layer

  • 24 oz cream cheese, softened (3 blocks)
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup heavy cream
  • Pinch of salt

 Vanilla Cake Layers

  • 2½ cups all-purpose flour
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1¾ cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk

 Strawberry Filling

  • 2 cups fresh strawberries, chopped
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch + 2 tablespoons water

 Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3–4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons heavy cream

 Instructions

1 Cheesecake Layer

  1. Preheat oven to 325°F (160°C).
  2. Beat cream cheese until smooth.
  3. Add sugar, lemon juice, vanilla, and salt. Mix well.
  4. Add eggs one at a time.
  5. Mix in heavy cream.
  6. Pour into a parchment-lined springform pan.
  7. Bake for 50–60 minutes, until center is just set.
  8. Cool completely, then refrigerate for at least 2 hours.

2 Vanilla Cake

  1. Preheat oven to 350°F (180°C).
  2. Mix flour, baking powder, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then vanilla.
  5. Alternate adding dry ingredients and milk.
  6. Divide batter between two round cake pans.
  7. Bake 25–30 minutes. Cool completely.

3 Strawberry Filling

  1. Combine strawberries, sugar, and lemon juice in a saucepan.
  2. Cook over medium heat until juicy.
  3. Add cornstarch mixture.
  4. Stir until thickened.
  5. Let cool completely.

4 Cream Cheese Frosting

  1. Beat cream cheese and butter until smooth.
  2. Add powdered sugar gradually.
  3. Add vanilla and heavy cream until creamy and spreadable.

 Cake Assembly

  1. Place one vanilla cake layer on a serving plate.
  2. Spread a thin layer of frosting.
  3. Add the chilled cheesecake layer.
  4. Spread strawberry filling on top.
  5. Place second vanilla cake layer.
  6. Frost the entire cake.
  7. Decorate with fresh strawberries

 Tips

  • Best served chilled.
  • Tastes even better the next day.
  • Can be made one day ahead for events.
