This classic KFC coleslaw recipe is creamy, sweet, slightly tangy, and perfectly balanced. It’s a well-known copycat that tastes very close to the original KFC coleslaw served with fried chicken. The secret is finely chopped vegetables and letting the coleslaw rest so the flavors fully develop.
Ingredients
For the Dressing
- 120 ml (½ cup) mayonnaise
- 65 g (⅓ cup) granulated sugar
- 60 ml (¼ cup) whole milk
- 60 ml (¼ cup) buttermilk
- 38 ml (2½ tablespoons) freshly squeezed lemon juice
- 22 ml (1½ tablespoons) distilled white vinegar
For the Vegetables
- 1 small green cabbage (about 900 g / 2 lb), very finely chopped
- 1 medium carrot, finely grated
- 2 tablespoons onion, very finely minced (optional but recommended for authentic flavor)
Instructions
Step 1: Prepare the Vegetables
- Remove the outer leaves of the cabbage and wash it well.
- Cut the cabbage into small pieces, then finely chop it using a sharp knife or food processor. The texture should be very fine, almost minced.
- Peel and grate the carrot using a fine grater.
- Finely mince the onion until very small.
Place all the vegetables into a large mixing bowl.
Step 2: Make the Dressing
In a separate bowl or blender, combine:
- Mayonnaise
- Sugar
- Whole milk
- Buttermilk
- Lemon juice
- White vinegar
Whisk or blend until the dressing is completely smooth and creamy, and the sugar is fully dissolved.
Step 3: Combine
- Pour the dressing over the chopped vegetables.
- Mix thoroughly using a spoon or spatula until all the vegetables are evenly coated with the dressing.
Step 4: Chill
- Cover the bowl with plastic wrap or a lid.
- Refrigerate for at least 4 hours.
- For best results, refrigerate overnight (8–12 hours). This resting time is essential for achieving the authentic KFC flavor.
