 Ingredients

 Meatloaf:

  • 2 pounds ground beef (80/20 recommended)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 2 large eggs
  • 1 packet French onion soup mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

 Onion Layer:

  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 teaspoon sugar (optional, helps caramelize)

Topping:

  • 6–8 slices Swiss cheese
  • 1/2 cup shredded mozzarella (optional, for extra melt)

 Optional Sauce:

  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce

 Instructions

1 Prepare the Onion Base

  1. Heat butter in a skillet over medium heat.
  2. Add sliced onions and cook slowly, stirring often.
  3. Sprinkle with sugar if using.
  4. Cook for 15–20 minutes until soft, golden, and caramelized.
  5. Remove from heat and set aside.

2 Make the Meatloaf Mixture

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, eggs, French onion soup mix, garlic powder, and black pepper.
  2. Mix gently until just combined—do not overmix.

3 Assemble in the Crockpot

  1. Line the slow cooker with parchment paper or lightly grease it.
  2. Spread half of the caramelized onions on the bottom.
  3. Shape the meat mixture into a loaf and place it on top.
  4. Add remaining onions over the meatloaf.
  5. Pour beef broth and Worcestershire sauce around (not over) the meatloaf.

4 Slow Cook

  • Cover and cook:
    • 6–7 hours on LOW, or
    • 3–4 hours on HIGH
  • Meatloaf should reach an internal temperature of 160°F (71°C).

5 Add the Cheese

  1. About 15–20 minutes before serving, place Swiss cheese slices on top.
  2. Cover and let cheese melt completely.

  • Carefully lift the meatloaf out using parchment paper.
  • Slice and serve with extra onions and juices from the crockpot.
