Ingredients
For the Chicken Filling
- 2 cups cooked chicken, diced or shredded
- 1 tablespoon olive oil or butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Optional: pinch of chili powder or cumin for extra flavor
For the Tortillas
- 4 large flour tortillas
For the Creamy Cheese Sauce
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1½ cups milk (warm)
- 1 cup shredded cheddar or mozzarella cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Optional: 2 tablespoons cream cheese or cooking cream (for extra richness)
Instructions
1. Prepare the Chicken Filling
Heat olive oil or butter in a skillet over medium heat.
Add the chopped onion and sauté until soft and translucent, about 3–4 minutes.
Add the minced garlic and cook for another 30 seconds until fragrant.
Stir in the cooked chicken, salt, pepper, paprika, garlic powder, onion powder, and any optional spices.
Cook for 3–5 minutes, stirring occasionally, until the chicken is well coated and heated through.
Remove from heat and set aside.
2. Make the Creamy Cheese Sauce
In a saucepan, melt the butter over medium heat.
Add the flour and whisk constantly for 1 minute to remove the raw flour taste.
Slowly pour in the warm milk while whisking to prevent lumps.
Continue whisking until the sauce thickens, about 3–5 minutes.
Reduce heat to low and add the shredded cheese. Stir until fully melted and smooth.
Season with salt and black pepper.
If using, add cream cheese or cooking cream for extra creaminess.
3. Assemble the Tortillas
Warm the tortillas slightly so they are soft and easy to fold.
Divide the chicken filling evenly among the tortillas and roll them up tightly.
Place the rolled tortillas seam-side down in a lightly greased baking dish or serving plate.
4. Add the Sauce
Pour the warm cheese sauce generously over the tortillas, making sure they are well covered.
Optional: Sprinkle extra shredded cheese on top.
5. Bake (Optional but Recommended)
Preheat oven to 180°C (350°F).
Bake for 10–15 minutes, or until the cheese is bubbly and slightly golden on top.
