Salisbury Steak with Mushroom Gravy (Classic Recipe)
What is Salisbury Steak?
Salisbury steak is a classic American comfort dish made from seasoned ground beef patties that are pan-seared and then simmered in a rich brown mushroom gravy.
Despite the name, it’s not a steak cut—it’s closer to a juicy hamburger steak, but served with a savory sauce instead of in a bun.
Ingredients
For the Salisbury Steaks:
- 500 g (1 lb) ground beef (preferably 80/20 for flavor)
- 1 small onion, finely grated or minced
- 2 cloves garlic, minced
- 1 large egg
- 1/2 cup breadcrumbs
- 2 tablespoons ketchup
- 1 teaspoon mustard (optional)
- 1 teaspoon Worcestershire sauce
- Salt and black pepper (to taste)
For the Mushroom Gravy:
- 250 g (8 oz) mushrooms, sliced
- 1 medium onion, thinly sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon mustard (optional)
- Salt and pepper to taste
- 1 tablespoon olive oil
Step-by-Step Instructions
1. Prepare the Beef Patties
In a large mixing bowl:
- Add the ground beef, grated onion, garlic, egg, breadcrumbs, ketchup, mustard, Worcestershire sauce, salt, and pepper.
- Mix gently using your hands or a spoon.
Do not overmix, as this can make the patties tough. - Divide the mixture into 4–5 equal portions.
- Shape each portion into oval or round patties, slightly flattened (about 1–1.5 cm thick).
2. Sear the Patties
- Heat a large skillet over medium heat and add olive oil.
- Place the patties in the skillet.
- Cook for about 3–4 minutes per side, until browned.
They don’t need to be fully cooked at this stage—they will finish cooking in the gravy.
- Remove the patties from the pan and set aside.
3. Make the Mushroom Gravy
Using the same skillet (for extra flavor):
- Add butter and let it melt.
- Add sliced onions and cook until soft and slightly golden (about 5 minutes).
- Add mushrooms and cook until they release their moisture and start to brown.
- Stir in the garlic (optional) and cook for 30 seconds.
Thicken the Gravy:
- Sprinkle the flour over the mushroom mixture.
- Stir well and cook for 1–2 minutes (this removes the raw flour taste).
Add Liquid:
- Gradually pour in the beef broth while stirring constantly.
- Add Worcestershire sauce and mustard.
- Season with salt and pepper.
The gravy will begin to thicken after a few minutes.
4. Combine and Simmer
- Return the browned patties to the skillet.
- Spoon some gravy over each patty.
- Cover and let simmer on low heat for 10–15 minutes.
This step allows the patties to fully cook and absorb the rich flavors of the sauce.
How to Serve
Salisbury steak is best served hot with:
- Mashed potatoes (classic choice)
- Steamed rice
- Crusty bread
- Steamed vegetables (like green beans or broccoli)
Tips for Best Results
- Use ground beef with some fat (like 80/20) for juicier patties.
- Don’t press the patties while cooking—this keeps them moist.
- If the gravy is too thick → add a little broth.
- If too thin → simmer longer or add a small flour slurry.
- For deeper flavor → add a splash of soy sauce.
Flavor Variations
- Add cream for a creamy mushroom sauce
- Use caramelized onions for extra sweetness
- Add fresh herbs like parsley or thyme
Final Result
You’ll get:
- Tender, juicy beef patties
- A rich, savory mushroom gravy
- A hearty, comforting meal perfect for lunch or dinner
