Breakfast Tater Tot Casserole
Crispy golden tater tots layered over a rich, savory sausage mixture, fluffy seasoned eggs, and plenty of gooey melted cheese — this breakfast casserole is the ultimate comfort dish. It’s perfect for weekend brunch, meal prep, or feeding a hungry crowd.
Ingredients
For the Sausage Layer:
- 1 lb (450 g) breakfast sausage (mild or spicy, depending on your taste)
- ½ medium yellow onion, finely diced
- 2 cloves garlic, minced
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust depending on sausage saltiness)
- ½ teaspoon paprika (optional, for extra flavor)
- ½ teaspoon dried oregano (optional)
For the Egg Mixture:
- 6 large eggs
- 1 cup milk (whole milk gives the best texture, but any works)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Additional Ingredients:
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 1 bag (about 28 oz / 750 g) frozen tater tots
- 2 tablespoons chopped parsley or green onions (optional, for garnish)
Instructions
1 Cook the Sausage Mixture
Start by heating a large skillet over medium heat. Add the breakfast sausage and break it apart using a wooden spoon or spatula.
Cook for about 5–7 minutes, until the sausage is fully browned and no longer pink.
Add the diced onion and cook for another 3–4 minutes, until softened and slightly translucent. Stir in the minced garlic and cook for 1 more minute until fragrant.
Season the mixture with black pepper, salt (if needed), paprika, and oregano. Remove from heat and set aside to cool slightly.
5 Prepare the Egg Mixture
In a large mixing bowl, crack the eggs and whisk them thoroughly until smooth.
Add the milk, salt, pepper, garlic powder, and onion powder. Whisk again until everything is well combined and slightly frothy. This helps create a light, fluffy texture once baked.
3 Assemble the Casserole
Preheat your oven to 350°F (180°C).
Lightly grease a 9×13-inch (or similar) baking dish with butter or cooking spray.
Spread the cooked sausage mixture evenly across the bottom of the dish.
Sprinkle about 1 cup of shredded cheese over the sausage layer.
Pour the egg mixture evenly over everything, making sure it spreads throughout the dish.
Carefully arrange the frozen tater tots in a single layer on top. You can line them up neatly for a nice presentation or scatter them for a rustic look.
Finish by sprinkling the remaining cheese over the tater tots.
4 Bake
Place the casserole in the preheated oven and bake for 35–45 minutes.
The casserole is done when:
- The eggs are fully set (not jiggly in the center)
- The top is golden brown
- The tater tots are crispy on the outside
If needed, you can broil for 2–3 minutes at the end to get extra crispiness on top — just keep an eye on it so it doesn’t burn.
5 Rest and Serve
Remove the casserole from the oven and let it rest for about 5–10 minutes before slicing. This helps everything set properly and makes it easier to serve.
Garnish with chopped parsley or green onions for a fresh touch.
Serve warm and enjoy!
