 Authentic Pastitsio (Greek Lasagna)

 

Pastitsio is a classic Greek baked pasta dish made with three rich layers: pasta, spiced meat sauce, and creamy béchamel. What makes it unique is the warm spices like cinnamon and cloves, which give it a distinctive Greek flavor.

Ingredients

1. Pasta Layer

  • 500g pasta (bucatini, penne, or ziti)
  • 2 egg whites
  • 1/2 cup grated Parmesan or Kefalotyri cheese
  • Salt (for boiling water)

2. Meat Sauce

  • 500–800g ground beef (or mix of beef and lamb)
  • 1 large onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 can (400g) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup red wine (optional but recommended)
  • 1 cinnamon stick (or 1/2 tsp ground cinnamon)
  • A pinch of ground cloves
  • 1 bay leaf
  • Salt and black pepper (to taste)
  • 2 tablespoons olive oil

3. Béchamel Sauce

  • 1 liter milk (warm)
  • 100g butter
  • 100g all-purpose flour
  • 2 egg yolks
  • 1/2–1 cup grated cheese
  • A pinch of nutmeg
  • Salt and white pepper

 Instructions

Step 1: Prepare the Meat Sauce

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and cook until soft and translucent.
  3. Add garlic and cook for about 1 minute.
  4. Add ground meat and cook until browned, breaking it apart.
  5. Stir in tomato paste, then add crushed tomatoes.
  6. Pour in red wine (if using) and let it simmer for 2–3 minutes.
  7. Add cinnamon, cloves, bay leaf, salt, and pepper.
  8. Simmer the sauce for about 25–30 minutes until thick and rich.
  9. Remove the cinnamon stick and bay leaf.

The sauce should not be watery—this is key for a clean layered dish.

Step 2: Cook the Pasta

  1. Boil pasta in salted water until just al dente (slightly firm).
  2. Drain and let it cool slightly.
  3. Mix pasta with egg whites and grated cheese.

This step helps the pasta hold together when baked.

Step 3: Make the Béchamel Sauce

  1. Melt butter in a saucepan over medium heat.
  2. Add flour and whisk continuously for 1–2 minutes.
  3. Slowly pour in warm milk, whisking constantly to avoid lumps.
  4. Cook until the sauce thickens (creamy but smooth).
  5. Remove from heat and let it cool slightly.
  6. Add egg yolks, grated cheese, nutmeg, salt, and pepper.
  7. Mix well until smooth.

Step 4: Assemble the Pastitsio

  1. Preheat oven to 180°C (350°F).
  2. In a baking dish:
    • First layer: pasta (spread evenly)
    • Second layer: meat sauce
    • Third layer: béchamel sauce (smooth the top)

You can sprinkle extra cheese on top for a golden crust.

Step 5: Bake

  • Bake for 40–50 minutes until the top is golden brown.
  • Let it rest for at least 15–20 minutes before slicing.

This resting time helps it set and keeps layers neat.

Tips for the Best Pastitsio

  • Use Kefalotyri cheese if you want authentic Greek flavor.
  • Don’t skip the cinnamon—it’s what makes it special.
  • Let it cool before cutting, or it will fall apart.
  • It tastes even better the next day!
