Slow Cooker Chicken Breasts in Sweet and Spicy Sauce

This slow cooker chicken recipe is perfect if you want something easy, flavorful, and tender with almost no effort. The chicken cooks slowly in a rich sweet and spicy sauce, becoming incredibly juicy and infused with flavor. It’s great for weeknight dinners, meal prep, or even serving guests.

 Ingredients

For the Chicken:

  • 3–4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder (optional)

For the Sweet and Spicy Sauce:

  • 1/2 cup honey (for sweetness and glaze)
  • 1/3 cup soy sauce (adds depth and saltiness)
  • 2 tablespoons ketchup (for richness and color)
  • 1 tablespoon hot sauce or chili paste (adjust to taste)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger (or 1/2 teaspoon ground ginger)
  • 1 tablespoon vinegar (white vinegar or apple cider vinegar)

Optional (for thickening the sauce):

  • 1 tablespoon cornstarch
  • 2 tablespoons water

 Instructions

1. Season the Chicken

Start by preparing your chicken breasts. Pat them dry with paper towels, then season both sides evenly with:

  • salt
  • black pepper
  • garlic powder
  • onion powder

Let the chicken sit for about 10–15 minutes so it absorbs the seasoning.

2. Prepare the Sauce

In a medium bowl, combine:

  • honey
  • soy sauce
  • ketchup
  • hot sauce
  • minced garlic
  • ginger
  • vinegar

Whisk everything together until the mixture becomes smooth and well combined. The sauce should taste balanced — sweet at first, then slightly tangy and spicy.

3. Assemble in the Slow Cooker

Place the seasoned chicken breasts in the bottom of your slow cooker in a single layer if possible.

Pour the prepared sauce evenly over the chicken, making sure all pieces are well coated.

4. Cooking Time

Cover the slow cooker with the lid and cook:

  • On LOW: 6–7 hours (best for very tender chicken)
  • On HIGH: 4–5 hours (faster option, still delicious)

Avoid opening the lid too often, as this releases heat and slows the cooking process.

5. Optional: Thicken the Sauce

If you prefer a thicker, glossy sauce:

  1. Remove about 1/2 cup of the cooking liquid from the slow cooker.
  2. In a small bowl, mix it with the cornstarch and water until smooth.
  3. Pour the mixture back into the slow cooker.
  4. Cook on HIGH for another 10–15 minutes until the sauce thickens.

6. Shred or Serve Whole

At this point, the chicken will be extremely tender.

You can either:

  • Serve the chicken breasts whole, coated in sauce
  • OR shred the chicken using two forks and mix it back into the sauce (highly recommended for maximum flavor)

 Serving Suggestions

This dish pairs well with:

  • Steamed white rice
  • Fried rice
  • Mashed potatoes
  • Roasted vegetables
  • Noodles

You can also use the shredded chicken in:

  • sandwiches
  • wraps
  • tacos

 Tips for Best Results

  • For more heat: add extra chili sauce or red pepper flakes
  • For more sweetness: increase the honey slightly
  • For extra flavor: add sliced onions or bell peppers to the slow cooker
  • Do not overcook on HIGH — it can dry out the chicken

 Final Result

You’ll get juicy, tender chicken coated in a rich, sticky sweet-and-spicy sauce. The flavors are perfectly balanced — sweet from the honey, savory from the soy sauce, and a gentle kick from the spice.

It’s the kind of recipe that tastes like it took hours of effort… but really didn’t
