Stuffed Mashed Potato Nests with Meat and Cheese

Ingredients
For the Mashed Potatoes:
- 4 large potatoes (peeled and cubed)
- 2 tablespoons butter
- ½ cup milk (warm)
- Salt, to taste
- Black pepper, to taste
- ½ cup grated cheese (optional, for extra flavor)
For the Meat Filling:
- 250g (½ lb) ground beef
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tablespoon oil
- Salt and black pepper, to taste
- ½ teaspoon turmeric
- ½ teaspoon paprika
- 2 tablespoons chopped parsley
- ½ cup shredded cheese (mozzarella or any melting cheese)
Instructions
1 Prepare the Mashed Potatoes:
Start by placing the peeled and cubed potatoes into a pot of salted water. Bring to a boil and cook for about 15–20 minutes, or until the potatoes are fork-tender.
Drain the potatoes well and transfer them to a large bowl. While still hot, mash them until smooth and lump-free. Add butter, warm milk, salt, and black pepper. Mix thoroughly until you achieve a creamy, smooth consistency.
If you want extra richness, stir in grated cheese at this stage. Set aside.
2 Cook the Meat Filling:
Heat oil in a skillet over medium heat. Add the chopped onion and sauté until soft and translucent. Stir in the minced garlic and cook for about 30 seconds until fragrant.
Add the ground beef and cook until browned, breaking it apart with a spoon. Season with salt, black pepper, turmeric, and paprika. Continue cooking until the meat is fully cooked and any excess liquid has evaporated.
Finish by adding chopped parsley and mixing well. Remove from heat and set aside.
3 Shape the Potato Nests:
Preheat your oven to 180°C (350°F).
Lightly grease a muffin tin (or use silicone molds). Take a portion of the mashed potatoes and press it into each cavity, shaping it into a “nest” by pushing the potatoes up along the sides and leaving a hollow center.
Make sure the base and sides are firm enough to hold the filling.
4 Fill and Top:
Spoon the prepared meat mixture into the center of each potato nest. Don’t overfill, but make sure each nest has a generous amount.
Top each one with shredded cheese for that delicious melted finish.
5 Bake:
Place the muffin tin in the preheated oven and bake for about 15–20 minutes, or until the tops are golden and the cheese is melted and bubbly.
Remove from the oven and let them cool slightly before carefully taking them out of the molds.
