 Strawberry Lasagna (No-Bake Dessert)

 

Strawberry Lasagna is a delicious layered, no-bake dessert made with a buttery cookie crust, a creamy cheesecake-style filling, a fruity strawberry gelatin layer, and a light whipped topping. It’s refreshing, rich, and perfect for spring and summer gatherings.

 Ingredients

 1. Crust Layer

  • 2 cups crushed cookies (Digestive biscuits or graham crackers)
  • ½ cup (120g) melted butter

 2. Cheesecake Layer

  • 8 oz (225–250g) cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (cold)
  • Optional: 1 packet whipped topping mix (like Chantilly powder)

 3. Strawberry Layer

  • 1 package strawberry gelatin (Jell-O style)
  • 2 cups hot water
  • 1 cup cold water
  • 1–2 cups fresh strawberries, sliced

 4. Topping

  • Whipped cream or whipped topping
  • Fresh strawberries (for garnish)
  • Optional: crushed cookies or white chocolate shavings

 Instructions

1 Prepare the Crust

Start by crushing your cookies into fine crumbs using a food processor or by placing them in a bag and crushing with a rolling pin.

In a bowl, mix the crumbs with melted butter until fully combined. The texture should resemble wet sand.

Press the mixture firmly into the bottom of a 9×13-inch pan to form an even crust. Use the back of a spoon or a glass to smooth it out.

Place the crust in the refrigerator for at least 20–30 minutes to set.

2 Make the Cheesecake Layer

In a large bowl, beat the softened cream cheese with sugar and vanilla extract until smooth and creamy.

In a separate bowl, whip the cold heavy cream until stiff peaks form (this will create a light and fluffy texture).

Gently fold the whipped cream into the cream cheese mixture. Be careful not to overmix—you want to keep it airy.

Spread this cheesecake layer evenly over the chilled crust. Smooth the top with a spatula.

Return the pan to the refrigerator and chill for another 30 minutes.

3 Prepare the Strawberry Layer

In a bowl, dissolve the strawberry gelatin in hot water, stirring until completely dissolved.

Add the cold water and mix well. Let the mixture cool at room temperature for a few minutes (it should not be hot when pouring).

Once slightly cooled, stir in the sliced fresh strawberries.

Carefully pour the strawberry mixture over the cheesecake layer. To avoid disturbing the layer underneath, you can pour it slowly over the back of a spoon.

Place the dessert in the refrigerator for at least 2–3 hours, or until the gelatin is fully set.

4 Add the Topping

Once the strawberry layer is firm, spread a layer of whipped cream or whipped topping over the top.

Decorate with fresh strawberries, crushed cookies, or white chocolate shavings for extra flavor and presentation.

 Chilling Time

For best results, refrigerate the dessert for at least 4–6 hours, but overnight is highly recommended. This helps all the layers firm up and enhances the flavor.

 Serving

Cut into square portions (like lasagna slices) and serve chilled.

This dessert is best enjoyed cold, straight from the refrigerator.
