Ingredients
- 4 bone-in or boneless pork chops (about 1 inch thick)
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 can (10.5 oz / 300 g) cream of mushroom soup
- 1/2 cup milk or heavy cream
- 1/2 cup shredded cheese (cheddar or mozzarella – optional)
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
- 2–3 medium potatoes, thinly sliced (optional for layering)
- Fresh parsley for garnish (optional)

Instructions
1. Heat the Olive Oil
Start by placing a large skillet over medium-high heat. Add the olive oil and allow it to heat until it begins to shimmer. This step is essential because properly heated oil ensures a good sear, helping to lock in the juices and enhance the flavor of the pork chops.
2. Season and Brown the Pork Chops
Season both sides of the pork chops generously with salt, black pepper, and paprika.
Place them carefully into the hot skillet and sear for about 3–4 minutes on each side, or until they develop a rich golden-brown crust.
Do not overcrowd the pan—cook in batches if necessary.
Once browned, remove the pork chops and set them aside on a plate.
3. Preheat the Oven and Prepare the Baking Dish
Preheat your oven to 350°F (175°C).
Lightly grease a 9×13-inch baking dish with oil or butter to prevent sticking and ensure even cooking.
4. Cook the Onion and Garlic
In the same skillet (do not clean it, as it contains flavorful bits), add the sliced onion.
Cook for 4–5 minutes until soft and translucent.
Add the minced garlic and cook for an additional 30–60 seconds until fragrant. Be careful not to burn the garlic.
5. Prepare the Creamy Sauce
Pour in the cream of mushroom soup and add the milk or heavy cream. Stir well to combine.
Season the sauce with thyme, a pinch of salt, and black pepper.
Let the mixture simmer gently for a few minutes until smooth and slightly thickened.
6. Assemble the Dish
If using potatoes:
- Arrange a layer of thinly sliced potatoes at the bottom of the prepared baking dish.
Then:
- Place the browned pork chops on top of the potatoes (or directly into the dish if not using potatoes).
- Pour the creamy mushroom sauce evenly over the pork chops.
Make sure all pieces are well coated for maximum flavor.
7. Bake the Pork Chops
Cover the dish with aluminum foil and place it in the preheated oven.
Bake for 45 minutes to allow the pork chops to become tender and absorb the flavors.
After 45 minutes:
- Remove the foil
- Sprinkle shredded cheese on top (if using)
Return to the oven and bake uncovered for an additional 10–15 minutes, or until the cheese is melted and golden.
8. Rest and Garnish
Remove the dish from the oven and let it rest for 5–10 minutes before serving.
Garnish with freshly chopped parsley for a touch of color and freshness.
