 One-Pan Italian Chicken with Potatoes & Green Beans

 

A simple and delicious one-pan meal with juicy chicken, crispy potatoes, and fresh green beans—all cooked together in the oven.

Ingredients

For the Chicken:

  • 4 chicken thighs (or chicken breasts)
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon

For the Vegetables:

  • 4 medium potatoes (cut into cubes)
  • 250g green beans (trimmed)
  • 1 onion (sliced)
  • 2 tablespoons olive oil
  • Salt and pepper
  • ½ teaspoon garlic powder

 Instructions

Step 1: Marinate the Chicken

In a bowl, mix:

  • Olive oil
  • Garlic
  • Thyme, rosemary, paprika
  • Salt and pepper
  • Lemon juice

Add the chicken and coat it well.

Let it sit for at least 30 minutes (longer = more flavor).

Step 2: Preheat Oven

Preheat your oven to 200°C (400°F).

Step 3: Cook the Potatoes

Put the potatoes and onion on a baking tray.

Add olive oil, salt, pepper, and garlic powder. Mix well.

Bake for 20 minutes.

Step 4: Add the Chicken

Take the tray out.

Place the chicken on top of the potatoes.

Bake for 25 minutes.

Step 5: Add Green Beans

Take the tray out again.

Add the green beans and mix them slightly with the potatoes.

Bake again for 15–20 minutes.

 When It’s Ready

  • Chicken is golden and fully cooked
  • Potatoes are soft inside and crispy outside
  • Green beans are tender
