 Classic Tapioca Pudding Recipe

 

A rich, creamy, old-fashioned dessert that’s comforting in every bite

 Ingredients:

  • 1/2 cup small tapioca pearls (NOT instant)
  • 2 cups water (for soaking)
  • 2 cups whole milk (for best creaminess)
  • 1/2 cup granulated sugar (adjust to taste)
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: 1/2 teaspoon cinnamon or nutmeg
  • Optional toppings: fresh fruit, raisins, or whipped cream

 Instructions (Step-by-Step):

Step 1: Soak the Tapioca

Start by placing the tapioca pearls in a bowl and covering them with 2 cups of water.

Let them soak for 30 minutes to 1 hour.
This step helps soften the pearls so they cook evenly and become tender.

After soaking, drain the tapioca and set it aside.

 Step 2: Begin Cooking

In a medium saucepan, combine:

  • soaked tapioca
  • milk
  • salt

Place the saucepan over medium-low heat.

Stir occasionally to prevent sticking. As it heats, the tapioca pearls will slowly begin to turn translucent, which means they are cooking properly.

This usually takes about 10–15 minutes.

Step 3: Add Sugar

Once the tapioca starts softening, add the sugar.

Stir well until completely dissolved. The mixture will begin to thicken slightly and smell sweet and comforting.

 Step 4: Prepare the Egg (Important Step!)

In a separate bowl, beat the egg.

Now, to avoid scrambling the egg:

  • Slowly add a few spoonfuls of the hot tapioca mixture into the egg
  • Stir constantly while doing this

This process is called tempering, and it gently warms the egg.

 Step 5: Combine Everything

Pour the tempered egg mixture back into the saucepan.

Cook for another 2–3 minutes, stirring constantly.

You’ll notice the pudding becoming:

  • thicker
  • smoother
  • creamier

Do NOT let it boil hard, or the egg may curdle.

 Step 6: Final Touch

Remove from heat and stir in the vanilla extract.

If you like, add cinnamon or nutmeg for extra flavor.
