Flourless Almond Cake with Raspberry Sauce

Flourless Almond Cake with Raspberry Sauce

Flourless almond cake is a rich, moist, and naturally gluten-free dessert that highlights the delicate flavor of almonds. Unlike traditional cakes made with wheat flour, this cake uses finely ground almonds (also called almond flour or almond meal) as its main base. The result is a soft, slightly dense cake with a nutty aroma and a tender texture.

When served with a fresh raspberry sauce, the dessert becomes perfectly balanced. The sweetness of the cake pairs beautifully with the bright, slightly tart flavor of raspberries. This elegant dessert is simple enough to prepare at home but sophisticated enough to serve at dinner parties, celebrations, or special occasions.

Ingredients

For the Flourless Almond Cake

  • 2 cups (200 g) almond flour or finely ground almonds
  • 3/4 cup (150 g) granulated sugar
  • 4 large eggs, at room temperature
  • 1/2 cup (115 g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional but recommended for extra flavor)
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder (optional, helps create a lighter texture)
  • Powdered sugar for dusting (optional)

For the Raspberry Sauce

  • 2 cups (200–250 g) fresh or frozen raspberries
  • 1/4 cup (50 g) sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons water

Optional additions:

  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (for a thicker sauce)

Equipment Needed

  • Mixing bowls
  • Whisk or electric mixer
  • 8-inch (20 cm) round cake pan
  • Parchment paper
  • Saucepan
  • Fine mesh strainer (optional)

Instructions

Step 1: Prepare the Oven and Pan

Preheat your oven to 350°F (180°C). Preparing the pan correctly is important because flourless cakes can stick easily.

Grease the cake pan with butter or non-stick spray. Then line the bottom with parchment paper and lightly grease the parchment as well. This ensures the cake releases easily once baked.

Set the prepared pan aside.

Step 2: Mix the Eggs and Sugar

In a large mixing bowl, add the eggs and granulated sugar.

Using a whisk or an electric mixer, beat the mixture for about 3–5 minutes until it becomes lighter in color and slightly thickened. This step helps incorporate air into the batter, which improves the texture of the cake.

Once the mixture looks pale and slightly fluffy, add:

  • Vanilla extract
  • Lemon zest

Mix again briefly until combined.

Step 3: Add the Butter

Slowly pour the melted butter into the egg and sugar mixture while whisking continuously. Make sure the butter is not too hot, otherwise it could cook the eggs.

Continue mixing until the batter becomes smooth and glossy.

Step 4: Incorporate the Almond Flour

In a separate bowl, combine:

  • Almond flour
  • Salt
  • Baking powder (if using)

Mix these dry ingredients to distribute them evenly.

Gradually add the almond mixture to the wet ingredients. Stir gently with a spatula or whisk until everything is fully combined. Do not overmix the batter; just mix until you have a smooth, uniform texture.

The batter will be slightly thicker than traditional cake batter.

Step 5: Bake the Cake

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Place the pan in the preheated oven and bake for 30–35 minutes.

The cake is ready when:

  • The top becomes golden brown
  • The center feels set
  • A toothpick inserted in the middle comes out mostly clean

Remove the cake from the oven and allow it to cool in the pan for about 10–15 minutes.

Then carefully run a knife around the edges and transfer the cake to a wire rack to cool completely.

Preparing the Raspberry Sauce

Step 1: Combine Ingredients

In a small saucepan, combine:

  • Raspberries
  • Sugar
  • Lemon juice
  • Water

Place the saucepan over medium heat.

Step 2: Cook the Sauce

As the mixture heats, the raspberries will begin to break down and release their juices.

Stir occasionally and let the mixture simmer for 5–8 minutes. The sauce will start to thicken slightly.

If you prefer a thicker sauce, add the cornstarch mixture and cook for another 1–2 minutes.

Step 3: Strain (Optional)

If you want a smooth sauce without raspberry seeds, pour the mixture through a fine mesh strainer into a bowl. Press gently with a spoon to extract the liquid.

If you enjoy the texture of the seeds, you can skip this step.

Allow the sauce to cool slightly before serving.

Assembling and Serving the Dessert

Once the cake has cooled completely, place it on a serving plate.

You can finish it in several ways:

  • Dust the top lightly with powdered sugar
  • Pour raspberry sauce over each slice
  • Serve extra sauce on the side

For an even more luxurious dessert, consider adding:

  • Fresh raspberries
  • Whipped cream
  • Vanilla ice cream
  • Toasted almond slices

Cut the cake into wedges and drizzle the raspberry sauce over each piece before serving.

Tips for the Best Flourless Almond Cake

Use finely ground almond flour
A fine texture creates a softer and smoother cake.

Bring eggs to room temperature
Room-temperature eggs mix more easily and help create a better structure.

Do not overbake
Flourless cakes should remain moist. Remove the cake once the center is set but still tender.

Let the cake cool completely
The cake becomes firmer as it cools, making it easier to slice.

Storage Instructions

  • Room temperature: Store the cake in an airtight container for up to 2 days.
  • Refrigerator: Keeps well for up to 5 days.
  • Freezer: Wrap slices individually and freeze for up to 2 months.

Raspberry sauce can be stored in the refrigerator for up to 1 week in a sealed container.

Nutritional Benefits

Because it is made with almonds instead of wheat flour, this cake offers some nutritional advantages:

  • Almonds provide healthy fats and protein
  • Naturally gluten-free
  • Rich in vitamin E and magnesium

However, like most desserts, it should still be enjoyed in moderation.

Summary:
Flourless almond cake with raspberry sauce is a simple yet elegant dessert that combines the nutty richness of almonds with the vibrant flavor of raspberries. Its moist texture, balanced sweetness, and beautiful presentation make it perfect for both casual gatherings and special occasions.
