 Ingredients

1. Pie Crust Ingredients

You can use a homemade crust or a store-bought crust if you prefer convenience.

  • 1 ¼ cups all-purpose flour
  • ½ cup cold unsalted butter, cut into small cubes
  • ¼ teaspoon salt
  • 3–4 tablespoons ice water

2. Strawberry Filling Ingredients

  • 1 kilogram (about 2 pounds) fresh strawberries
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 cup water
  • 1 small package strawberry gelatin (such as **Jell-O strawberry gelatin)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

3. Optional Toppings

  • Whipped cream
  • Powdered sugar
  • Fresh mint leaves
  • Extra sliced strawberries for decoration

 Step-by-Step Instructions

Step 1: Prepare the Pie Crust

In a large mixing bowl, combine the flour and salt. Add the cold butter cubes and mix using a pastry cutter, fork, or your fingers until the mixture resembles coarse crumbs.

Slowly add ice water, one tablespoon at a time, mixing gently until the dough begins to come together. Do not overmix, as this can make the crust tough.

Shape the dough into a disk, wrap it in plastic wrap, and place it in the refrigerator for at least 30 minutes. Chilling the dough helps the butter firm up again, which creates a flaky crust when baked.

Step 2: Bake the Pie Crust

Preheat your oven to 180°C (350°F).

Roll out the chilled dough on a lightly floured surface until it forms a circle about 30 cm (12 inches) wide. Carefully place it into a 23 cm (9-inch) pie dish.

Press the dough gently into the bottom and sides of the dish. Trim any excess dough around the edges. Use a fork to poke small holes in the bottom of the crust (this prevents air bubbles during baking).

Bake the crust for 15–20 minutes, or until it turns light golden brown.

Remove it from the oven and allow it to cool completely before adding the filling.

Step 3: Prepare the Strawberry Glaze

In a medium saucepan, combine:

  • 1 cup water
  • sugar
  • cornstarch

Whisk the ingredients together until smooth.

Place the saucepan over medium heat and cook the mixture while stirring constantly. After several minutes, the mixture will begin to thicken and become slightly translucent.

Remove the pan from the heat and immediately stir in:

  • strawberry gelatin
  • lemon juice
  • vanilla extract

Continue stirring until the gelatin completely dissolves and the mixture becomes smooth and glossy. Set the glaze aside and allow it to cool slightly.

Step 4: Prepare the Strawberries

Wash the strawberries thoroughly under cold water.

Remove the green tops (called hulls). If the strawberries are large, slice them in half. Smaller strawberries can be left whole.

Pat them dry gently using a paper towel. This step is important because excess water can make the pie filling watery.

Step 5: Assemble the Pie

Place the fresh strawberries into the cooled pie crust. Arrange them tightly so the pie is full and visually appealing.

Slowly pour the strawberry glaze over the berries, making sure the glaze spreads evenly between them and covers the top.

Use a spoon or spatula to gently distribute the glaze if necessary.

Step 6: Chill the Pie

Place the assembled pie into the refrigerator and chill it for at least 3 to 4 hours.

During this time, the gelatin glaze will firm up and hold the strawberries together, giving the pie its classic shiny appearance.

 Serving Suggestions

Once the pie is fully chilled and set, slice it carefully with a sharp knife.

Serve each slice with:

  • a dollop of whipped cream
  • additional fresh strawberries
  • a sprinkle of powdered sugar

Some people also enjoy this pie with vanilla ice cream or sweetened cream cheese.

Tips for the Best Strawberry Pie

Use ripe strawberries: The flavor of the pie depends heavily on the quality of the fruit. Choose strawberries that are bright red, sweet, and fragrant.

Let the crust cool completely: If the crust is still warm when adding the filling, it may become soggy.

Do not pour hot glaze over strawberries: Allow the glaze to cool slightly before pouring it over the berries to keep them fresh and firm.

Chill long enough: The pie needs several hours to fully set. Cutting it too early may cause the filling to run.

Why This Pie Is So Popular

The original strawberry pie served by Big Boy became famous because it combines:

  • the freshness of raw strawberries
  • the sweetness of a glossy fruit glaze
  • the buttery flavor of a baked pie crust

Unlike traditional baked fruit pies, this dessert tastes lighter and fresher, making it perfect for warm weather.

Final Result:
A beautiful fresh strawberry pie with a golden crust, shiny strawberry glaze, and juicy berries in every bite.
