Parmesan Meatloaf Recipe
This Parmesan Meatloaf is a savory, cheesy twist on the classic comfort food. It’s moist, flavorful, and perfect for family dinners. Follow this step-by-step guide to make a meatloaf that is tender inside with a delicious Parmesan crust on top.
Ingredients
- 1 lb (450 g) ground beef
- 1/2 lb (225 g) ground pork (optional for extra flavor)
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2–3 garlic cloves, minced
- 1/2 cup milk (whole milk recommended)
- 1 large egg
- 1/2 cup ketchup or tomato sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional for a smoky flavor)
- 1 tsp dried oregano or thyme
- Butter or oil for greasing the pan
Optional Toppings: Extra ketchup, more grated Parmesan, fresh herbs for garnish
Step 1: Prepare the Meat Mixture
- In a large bowl, combine ground beef, ground pork (if using), chopped onion, minced garlic, breadcrumbs, Parmesan, milk, egg, and ketchup.
- Season with salt, pepper, paprika, and dried herbs.
- Use your hands (or a spatula) to mix everything gently but thoroughly until all ingredients are evenly combined.
Tip: Avoid overmixing the meat, or your meatloaf may become dense instead of tender.
Step 2: Shape the Meatloaf
- Preheat your oven to 350°F (180°C).
- Grease a loaf pan with butter or oil to prevent sticking.
- Transfer the meat mixture into the loaf pan and shape it into a loaf (roughly rectangular or oval).
Step 3: Add the Topping
- Mix 2–3 tablespoons of ketchup with a little Parmesan in a small bowl.
- Spread this mixture over the top of the meatloaf.
- Sprinkle extra herbs like thyme or oregano for added flavor and presentation.
Tip: This topping creates a slightly caramelized crust that locks in juices.
Step 4: Bake the Meatloaf
- Place the loaf pan in the preheated oven.
- Bake for 35–45 minutes. The meatloaf is done when it reaches an internal temperature of 160°F (70°C) and the top is lightly browned.
- Remove from the oven and let it rest for 5–10 minutes before slicing. This helps retain the juices and makes slicing easier.
Tip: Tent the meatloaf with foil if the top browns too quickly.
Step 5: Slice and Serve
- Slice the meatloaf into even pieces.
- Serve with classic sides such as:
- Creamy mashed potatoes
- Roasted or steamed vegetables
- Fresh green salad
- Optional: drizzle a bit more ketchup or sprinkle extra Parmesan over the slices before serving.
Chef’s Tip: For extra flavor, you can add chopped bell peppers or mushrooms into the meat mixture before baking.
This recipe makes a moist, cheesy, and flavorful meatloaf that’s perfect for dinner parties, meal prep, or cozy family meals. Leftovers can be stored in the fridge for up to 3 days and taste amazing reheated.
