This Parmesan Meatloaf is a savory, cheesy twist on the classic comfort food. It’s moist, flavorful, and perfect for family dinners. Follow this step-by-step guide to make a meatloaf that is tender inside with a delicious Parmesan crust on top.

Ingredients

  • 1 lb (450 g) ground beef
  • 1/2 lb (225 g) ground pork (optional for extra flavor)
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2–3 garlic cloves, minced
  • 1/2 cup milk (whole milk recommended)
  • 1 large egg
  • 1/2 cup ketchup or tomato sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional for a smoky flavor)
  • 1 tsp dried oregano or thyme
  • Butter or oil for greasing the pan

Optional Toppings: Extra ketchup, more grated Parmesan, fresh herbs for garnish

Step 1: Prepare the Meat Mixture

  1. In a large bowl, combine ground beef, ground pork (if using), chopped onion, minced garlic, breadcrumbs, Parmesan, milk, egg, and ketchup.
  2. Season with salt, pepper, paprika, and dried herbs.
  3. Use your hands (or a spatula) to mix everything gently but thoroughly until all ingredients are evenly combined.

Tip: Avoid overmixing the meat, or your meatloaf may become dense instead of tender.

Step 2: Shape the Meatloaf

  1. Preheat your oven to 350°F (180°C).
  2. Grease a loaf pan with butter or oil to prevent sticking.
  3. Transfer the meat mixture into the loaf pan and shape it into a loaf (roughly rectangular or oval).

Step 3: Add the Topping

  1. Mix 2–3 tablespoons of ketchup with a little Parmesan in a small bowl.
  2. Spread this mixture over the top of the meatloaf.
  3. Sprinkle extra herbs like thyme or oregano for added flavor and presentation.

Tip: This topping creates a slightly caramelized crust that locks in juices.

Step 4: Bake the Meatloaf

  1. Place the loaf pan in the preheated oven.
  2. Bake for 35–45 minutes. The meatloaf is done when it reaches an internal temperature of 160°F (70°C) and the top is lightly browned.
  3. Remove from the oven and let it rest for 5–10 minutes before slicing. This helps retain the juices and makes slicing easier.

Tip: Tent the meatloaf with foil if the top browns too quickly.

Step 5: Slice and Serve

  1. Slice the meatloaf into even pieces.
  2. Serve with classic sides such as:
    • Creamy mashed potatoes
    • Roasted or steamed vegetables
    • Fresh green salad
  3. Optional: drizzle a bit more ketchup or sprinkle extra Parmesan over the slices before serving.
