 Slow-Cooked Turkey (Oven-Roasted & Tender)

Ingredients:

  • 1 whole turkey (4–6 kg / 9–13 lbs), thawed
  • 1/2 cup unsalted butter, softened
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon paprika
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 lemon, halved
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups chicken or turkey broth

Instructions:

  1. Preheat the oven to 160°C (325°F).
  2. Pat the turkey dry with paper towels. Remove giblets from the cavity.
  3. Mix butter, olive oil, garlic, salt, pepper, paprika, thyme, and rosemary.
  4. Gently loosen the skin and rub half of the butter mixture under the skin. Rub the rest all over the outside.
  5. Stuff the cavity with lemon, onion, carrots, and celery.
  6. Place the turkey on a rack in a roasting pan. Pour broth into the bottom of the pan.
  7. Cover loosely with foil and roast slowly for about 3 to 4 hours (approximately 15 minutes per pound).
  8. Remove foil during the last 45 minutes to allow the skin to turn golden brown.
  9. The turkey is ready when the internal temperature reaches 75°C (165°F).
  10. Let rest for 20–30 minutes before carving.

Result: Juicy, tender turkey with crispy golden skin.

 Creamy Mashed Potatoes

Ingredients:

  • 1.5 kg (3 lbs) potatoes, peeled and chopped
  • 1/2 cup butter
  • 1/2–1 cup warm milk
  • Salt and pepper to taste

Instructions:

  1. Boil potatoes in salted water for 15–20 minutes until fork-tender.
  2. Drain and mash immediately.
  3. Add butter and warm milk gradually.
  4. Season with salt and pepper.

Tip: For extra creamy potatoes, use heavy cream instead of milk.

 Homemade Turkey Gravy

Ingredients:

  • Pan drippings from turkey
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups turkey or chicken broth
  • Salt & pepper

Instructions:

  1. Melt butter in a saucepan.
  2. Whisk in flour and cook for 1–2 minutes (make a roux).
  3. Slowly whisk in pan drippings and broth.
  4. Simmer until thickened (5–7 minutes).
  5. Season to taste.

Rich, smooth, and perfect over turkey and potatoes.

 Garlic Green Beans

Ingredients:

  • 500 g (1 lb) fresh green beans
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper

Instructions:

  1. Boil green beans for 5–7 minutes until tender-crisp.
  2. Drain and sauté in olive oil with garlic for 2–3 minutes.
  3. Season with salt and pepper.
