Creamy Garlic Mushrooms and Bacon

Ingredients
- 200g (7 oz) bacon, chopped
- 400g (14 oz) mushrooms (button or cremini), sliced
- 4 cloves garlic, minced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 cup (240 ml) heavy cream
- ½ cup grated Parmesan cheese
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon dried thyme (optional)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
Step 1: Cook the Bacon
- Heat a large skillet over medium heat.
- Add the chopped bacon and cook until crispy and golden brown (about 5–7 minutes).
- Remove bacon with a slotted spoon and set aside on paper towels.
- Leave about 1 tablespoon of bacon fat in the pan for extra flavor.
Step 2: Sauté the Mushrooms
- Add butter and olive oil to the same skillet.
- Add sliced mushrooms in a single layer.
- Cook without stirring for 2–3 minutes to allow browning.
- Stir and cook another 4–5 minutes until mushrooms are golden and tender.
Tip: Don’t overcrowd the pan, or mushrooms will steam instead of brown.
Step 3: Add Garlic
- Add minced garlic to the mushrooms.
- Cook for 30 seconds to 1 minute until fragrant (do not burn).
Step 4: Make the Cream Sauce
- Pour in the heavy cream and stir well.
- Reduce heat to low and let simmer for 5 minutes until slightly thickened.
- Add Parmesan cheese, salt, black pepper, and thyme.
- Stir until the sauce becomes creamy and smooth.
Step 5: Combine Everything
- Add the cooked bacon back into the skillet.
- Stir well and simmer for 2–3 more minutes.
- Taste and adjust seasoning if needed.
Step 6: Garnish & Serve
Sprinkle fresh parsley on top and serve warm.
