 Ingredients

  • 200g (7 oz) bacon, chopped
  • 400g (14 oz) mushrooms (button or cremini), sliced
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 cup (240 ml) heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon dried thyme (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

 Instructions

Step 1: Cook the Bacon

  1. Heat a large skillet over medium heat.
  2. Add the chopped bacon and cook until crispy and golden brown (about 5–7 minutes).
  3. Remove bacon with a slotted spoon and set aside on paper towels.
  4. Leave about 1 tablespoon of bacon fat in the pan for extra flavor.

Step 2: Sauté the Mushrooms

  1. Add butter and olive oil to the same skillet.
  2. Add sliced mushrooms in a single layer.
  3. Cook without stirring for 2–3 minutes to allow browning.
  4. Stir and cook another 4–5 minutes until mushrooms are golden and tender.

Tip: Don’t overcrowd the pan, or mushrooms will steam instead of brown.

Step 3: Add Garlic

  1. Add minced garlic to the mushrooms.
  2. Cook for 30 seconds to 1 minute until fragrant (do not burn).

Step 4: Make the Cream Sauce

  1. Pour in the heavy cream and stir well.
  2. Reduce heat to low and let simmer for 5 minutes until slightly thickened.
  3. Add Parmesan cheese, salt, black pepper, and thyme.
  4. Stir until the sauce becomes creamy and smooth.

Step 5: Combine Everything

  1. Add the cooked bacon back into the skillet.
  2. Stir well and simmer for 2–3 more minutes.
  3. Taste and adjust seasoning if needed.

Step 6: Garnish & Serve

Sprinkle fresh parsley on top and serve warm.
