The 3 Envelope Roast is a classic American comfort-food recipe known for being incredibly easy and full of flavor. It gets its name from the three seasoning “envelopes” (packets) used to create a rich, savory gravy while the beef slowly becomes fall-apart tender.

Ingredients
- 3–5 lb (1.5–2.5 kg) beef chuck roast
- 1 packet ranch seasoning mix
- 1 packet Italian dressing mix
- 1 packet brown gravy mix
- ½ cup water or beef broth
- 1 tablespoon olive oil (optional, for searing)
Optional vegetables:
- 4–5 potatoes, peeled and chopped
- 3 carrots, sliced
- 1 large onion, cut into chunks
- 3 cloves garlic
Instructions (Slow Cooker – Best Method)
Step 1: Optional Sear
Heat olive oil in a skillet over medium-high heat. Sear the chuck roast for 2–3 minutes per side until browned. This step locks in flavor but can be skipped if short on time.
Step 2: Prepare the Seasoning
In a small bowl, mix:
- Ranch seasoning
- Italian dressing mix
- Brown gravy mix
- ½ cup water or broth
Stir until combined.
Step 3: Assemble
Place the roast in the slow cooker. Add vegetables around the meat if using. Pour the seasoning mixture evenly over the top.
Step 4: Cook
- Low: 8–9 hours (recommended)
- High: 4–5 hours
