 3 Envelope Roast (Easy, Tender Slow Cooker Pot Roast)

 

The 3 Envelope Roast is a classic American comfort-food recipe known for being incredibly easy and full of flavor. It gets its name from the three seasoning “envelopes” (packets) used to create a rich, savory gravy while the beef slowly becomes fall-apart tender.

This recipe is perfect for busy days because it requires minimal prep and delivers restaurant-quality results with very little effort.

 Ingredients

  • 3–5 lb (1.5–2.5 kg) beef chuck roast
  • 1 packet ranch seasoning mix
  • 1 packet Italian dressing mix
  • 1 packet brown gravy mix
  • ½ cup water or beef broth
  • 1 tablespoon olive oil (optional, for searing)

Optional vegetables:

  • 4–5 potatoes, peeled and chopped
  • 3 carrots, sliced
  • 1 large onion, cut into chunks
  • 3 cloves garlic

 Instructions (Slow Cooker – Best Method)

Step 1: Optional Sear

Heat olive oil in a skillet over medium-high heat. Sear the chuck roast for 2–3 minutes per side until browned. This step locks in flavor but can be skipped if short on time.

Step 2: Prepare the Seasoning

In a small bowl, mix:

  • Ranch seasoning
  • Italian dressing mix
  • Brown gravy mix
  • ½ cup water or broth

Stir until combined.

Step 3: Assemble

Place the roast in the slow cooker. Add vegetables around the meat if using. Pour the seasoning mixture evenly over the top.

Step 4: Cook

  • Low: 8–9 hours (recommended)
  • High: 4–5 hours

The roast is ready when it easily shreds with a fork.

 Oven Method (No Slow Cooker)

  1. Preheat oven to 325°F (160°C).
  2. Place roast in a covered Dutch oven or baking dish.
  3. Pour seasoning mixture over the meat.
  4. Cover tightly with a lid or foil.
  5. Bake for 3–4 hours, until fork-tender.

 Serving Suggestions

Serve with:

  • Mashed potatoes
  • Steamed rice
  • Crusty bread
  • Buttered egg noodles

Spoon the rich gravy over everything before serving.

 Tips for Perfect 3 Envelope Roast

  • Do not add extra salt — seasoning packets contain plenty.
  • For deeper flavor, use beef broth instead of water.
  • Add mushrooms for extra richness.
  • Leftovers taste even better the next day.
  • Store in the refrigerator for up to 4 days or freeze for up to 3 months.
