 Ingredients

  • 1 ½ cups granulated sugar
  • ¾ cup brown sugar (light or dark)
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups pecan halves (lightly toasted)
  • Pinch of salt

 Instructions

1. Prepare Your Workspace

Line a baking sheet with parchment paper or lightly grease it. Set aside.
Toast the pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Remove from heat.

2. Make the Praline Syrup

In a medium saucepan over medium heat, combine:

  • Granulated sugar
  • Brown sugar
  • Heavy cream
  • Butter
  • Salt

Stir constantly until the mixture comes to a gentle boil.

3. Cook Until Thickened

Let the mixture boil for 3–5 minutes, stirring frequently, until it thickens slightly and reaches a soft, creamy consistency.

4. Add Vanilla & Pecans

Remove the saucepan from heat.
Quickly stir in:

  • Vanilla extract
  • Toasted pecans

Beat the mixture with a wooden spoon for 1–2 minutes until it begins to lose its glossy shine and thickens.

5. Drop the Pralines

Using a spoon, drop dollops of the mixture onto the prepared parchment paper, forming small candy rounds.

6. Cool & Set

Allow the pralines to cool at room temperature for 20–30 minutes, or until fully set and firm.

  • Serve at room temperature
  • Store in an airtight container for up to 1 week
