Crescent Reuben Bake
Crescent Reuben Bake is an easy and delicious dinner that turns the classic Reuben sandwich into a warm, cheesy casserole. It has layers of corned beef, sauerkraut, Swiss cheese, and creamy dressing, all baked inside buttery crescent roll dough. This recipe is perfect for a family dinner, potluck, or game day meal.
Ingredients
- 2 cans refrigerated crescent roll dough
- 1 pound corned beef, chopped or torn
- 1½–2 cups sauerkraut, well drained
- 8 ounces Swiss cheese, sliced or shredded
- ¾–1 cup Thousand Island or Russian dressing
- 1 egg (for egg wash)
- 1 tablespoon caraway seeds (optional)
- Black pepper, to taste
Instructions
Step 1: Preheat the Oven
Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Step 2: Make the Bottom Crust
Unroll one can of crescent dough and press it into the bottom of the baking dish. Pinch the seams together to make one solid layer. Press the dough slightly up the sides of the pan.
Step 3: Add the Filling
Layer the ingredients evenly over the dough:
- Corned beef
- Sauerkraut (make sure it is squeezed dry)
- Swiss cheese
- Thousand Island dressing
Sprinkle with black pepper and caraway seeds if using.
Step 4: Add the Top Crust
Unroll the second can of crescent dough and place it over the filling. Pinch the seams together and gently seal the edges.
Step 5: Egg Wash
Beat the egg and brush it over the top of the dough. This helps the crust turn golden brown.
Step 6: Bake
Bake uncovered for 30–35 minutes, or until the top is golden and cooked through. If the top browns too quickly, loosely cover with foil.
Step 7: Rest and Serve
Remove from the oven and let it rest for 5–10 minutes before slicing. Serve warm.
