Ingredients
For the beef:
- 2 tablespoons olive oil
- 1 pound beef stew meat, cut into bite-size pieces
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
For the onion sauce:
- 2 large yellow onions, thinly sliced
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme (optional)
For the noodles:
- 12 ounces egg noodles (or any pasta of choice)
Optional additions:
- ½ cup heavy cream (for a creamy version)
- ½–1 cup shredded Gruyère, Swiss, or mozzarella cheese
- Fresh parsley for garnish
Instructions
Step 1: Brown the Beef
Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the beef stew meat and season it with onion powder, garlic powder, salt, and black pepper.
Cook the beef for about 5–7 minutes, stirring occasionally, until it is well browned on all sides. Browning the beef adds depth and richness to the final dish. Once browned, remove the beef from the pan and set it aside.
Step 2: Caramelize the Onions
Reduce the heat to medium and add the butter to the same pan. Once melted, add the sliced onions. Cook the onions slowly for 15–20 minutes, stirring frequently.
The onions should soften, then gradually turn golden brown and caramelized. This step is very important, as caramelized onions provide the signature sweet and savory flavor of the dish.
Add the minced garlic and cook for an additional 30 seconds, until fragrant.
Step 3: Make the Sauce
Pour in the beef broth, Worcestershire sauce, and dried thyme (if using). Stir well, scraping the bottom of the pan to release any browned bits. These bits add a lot of flavor to the sauce.
Return the browned beef to the pan. Reduce the heat to low, cover, and let the mixture simmer for 20–25 minutes, or until the beef becomes tender.
For a creamy version, stir in the heavy cream during the last 5 minutes of cooking.
Step 4: Cook the Noodles
While the beef and onion mixture is simmering, cook the egg noodles according to the package instructions in salted water. Drain well and set aside.
Step 5: Combine Everything
Add the cooked noodles directly to the skillet with the beef and onion sauce. Gently stir until the noodles are fully coated with the sauce.
If using cheese, sprinkle it evenly over the top. Cover the pan and allow the cheese to melt for 3–5 minutes before serving.
Serving Suggestions
Garnish with freshly chopped parsley and additional black pepper if desired. Serve hot with crusty bread, garlic bread, or a simple green salad.
Tips and Variations
- Slow Cooker Option: After browning the beef and onions, transfer everything to a slow cooker and cook on LOW for 6–7 hours. Add cooked noodles just before serving.
- Extra Cheesy: Use Gruyère or Swiss cheese for a more authentic French onion flavor.
- More Sauce: Add an extra ½ cup of beef broth if you prefer a saucier dish.
- Protein Swap: Chicken or mushrooms can be used instead of beef for a different variation.
