Crispy Bacon & Potato Sheet Pan Recipe

Ingredients
- 2 lbs (900 g) baby potatoes, halved or quartered
- 6–8 slices bacon, chopped into bite-size pieces
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1–2 teaspoons fresh rosemary or thyme (or ½ tsp dried)
- Salt and black pepper, to taste
Optional add-ins:
- Paprika or smoked paprika
- Onion powder
- Grated Parmesan cheese
- Fresh parsley for garnish
Instructions
1 Preheat the Oven
Preheat your oven to 425°F (220°C).
A high temperature is key to getting crispy potatoes.
2 Prepare the Sheet Pan
Line a large sheet pan with parchment paper or lightly grease it with oil to prevent sticking and make cleanup easier.
3 Season the Potatoes
In a large bowl, add:
- Potatoes
- Olive oil
- Garlic powder
- Rosemary or thyme
- Salt and black pepper
Toss well until the potatoes are evenly coated.
4 Assemble the Pan
- Spread the seasoned potatoes in a single layer on the sheet pan.
- Scatter the chopped bacon evenly over the potatoes.
Don’t overcrowd the pan — space helps everything get crispy instead of soggy.
5 Bake
Place the pan in the oven and bake for 30–35 minutes.
- Halfway through cooking, flip the potatoes and stir slightly so they brown evenly.
- The dish is ready when the potatoes are golden and crispy and the bacon is fully cooked.

Use evenly sized potato pieces
Keep everything in one layer
Use a hot oven (no lower than 400°F / 200°C)
