This comforting dish is inspired by traditional Irish cooking, known for its simplicity, rich flavors, and hearty ingredients. Made in a slow cooker, these Irish potatoes turn out tender, creamy, and deeply flavorful—perfect as a side dish or even a main course on a cold day.

Ingredients

  • 2 kg (about 4–5 lbs) potatoes, peeled and cut into large chunks
    (Yukon Gold or Russet potatoes work best)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 3 tablespoons butter, cut into small pieces
  • ½ cup heavy cream or whole milk
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon dried thyme or parsley
  • ½ teaspoon paprika (optional, for warmth and color)
  • ½ cup shredded Irish cheddar or sharp cheddar cheese (optional)
  • Chopped fresh parsley or green onions, for garnish

Instructions

  1. Prepare the potatoes:
    Peel the potatoes and cut them into evenly sized chunks. This helps them cook at the same rate and become soft and creamy.
  2. Layer the ingredients:
    Place the potatoes into the slow cooker. Add the chopped onion and minced garlic on top. Sprinkle with salt, black pepper, thyme, and paprika if using.
  3. Add liquid and butter:
    Pour the broth evenly over the potatoes. Scatter the butter pieces across the top so they slowly melt and enrich the dish as it cooks.
  4. Slow cook:
    Cover the slow cooker with the lid and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are very tender and easily pierced with a fork.
  5. Make it creamy:
    Once the potatoes are fully cooked, gently mash them directly in the slow cooker using a potato masher. Add the cream or milk and stir until you reach your desired texture—chunky or smooth.
