Poor Man’s Husband Casserole (Old-School Comfort Food)

This is a budget-friendly, filling casserole made with simple pantry ingredients. It’s creamy, cheesy, hearty, and perfect for feeding a family. The name comes from the idea that it’s cheap but so good it’ll keep your husband happy

 Ingredients

Main ingredients:

  • 1 lb (450 g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced (optional but recommended)
  • 1 can (10.5 oz / 300 g) cream of mushroom soup
  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • 1 cup milk
  • 2 cups cooked egg noodles or elbow macaroni
  • 1½ cups shredded cheddar cheese (or cheddar–mozzarella mix)

Seasoning:

  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp Italian seasoning (optional)

Optional toppings (highly recommended):

  • ½ cup crispy fried onions OR
  • ½ cup crushed crackers OR
  • ½ cup breadcrumbs

 Step-by-Step Instructions

1 Cook the pasta

  • Boil noodles in salted water until just tender (al dente).
  • Drain and set aside.

Don’t overcook — they’ll cook more in the oven.

2 Cook the beef

  • Heat a pan over medium heat.
  • Add ground beef and chopped onion.
  • Cook until beef is fully browned and onion is soft.
  • Drain excess fat.

Add:

  • Garlic
  • Salt, pepper, paprika, Italian seasoning
    Cook 30 seconds until fragrant.

3 Make the creamy sauce

In a large bowl, mix:

  • Cream of mushroom soup
  • Cream of chicken soup
  • Milk

Stir until smooth.

4 Combine everything

Add to the sauce:

  • Cooked beef mixture
  • Cooked noodles
  • 1 cup of shredded cheese

Mix until everything is well coated and creamy.

5 Assemble the casserole

  • Preheat oven to 375°F (190°C).
  • Lightly grease a baking dish.
  • Pour mixture into the dish and spread evenly.
  • Sprinkle remaining cheese on top.
  • Add fried onions or cracker crumbs if using.

6 Bake

  • Bake 30–35 minutes, uncovered.
  • Top should be:
    • Bubbling
    • Golden
    • Slightly crispy on top

Let rest 5–10 minutes before serving.
